Title: Bacon & cheese rolls

CHEESE & BACON ROLLS

7g sachet dry yeast (I used a defiance 8g sachet) - or 2 teaspoons worth.
2 tsp caster sugar
280g  warm water
480g bread flour (I used wallaby baker's flour)
1 tsp sea salt
1 tblsp good olive oil
200g rindless bacon finely chopped
1 1/3 cups grated tasty cheese
1 egg lightly beaten

Place yeast, sugar and warm water into TM jug, mix 20 secs - speed 4. Stand in jug  for 10 mins, or until frothy.

 Add salt, flour and oil, and mix 5 secs - speed 7 to combine.
Set dial to closed lid position, and set for 1 minute 30 secs on interval speed.

Wrap in TM bread mat, or place in a large, lightly greased bowl. Cover and set aside in a warm place for 1 hour, or until doubled in size. (I placed it in my warm car, and it was ready in 30 minutes).

Using your fist, punch dough down. Knead until smooth.

Grease two large baking trays (I used olive oil spray - made the bases nice and crunchy). Divide dough into 8 even portions. Roll each portion into a 10cm x 12cm oval shape. Place ovals, 5cm apart on a prepared trays.
(You can shape them into 10 or 12 dinner rolls if you like, if you were wanting to stretch them further.......or roll out and place in two roll tins, shown here (http://www.forumthermomix.com/index.php?topic=3114.msg122664#msg122664))

Cover with lightly greased cling wrap (used olive spray again). Set aside in a warm place for 30-40 minutes or until dough has almost doubled in size.

Pre-heat oven 200c normal, or 180c fan force (preferred). Once ovals have risen, brush with whisked egg, and sprinkle with the cheese then bacon pieces.

Bake for 18-20 minutes.

TIP: Best eaten straight from the oven, or freeze once they have cooled (usually they are gone by then  ;))

Gosh Maddy, you really are giving JulieO a bit of competition in the recipe/photo stakes. 

These look brilliant.  Love the soft appearance of the cheese and bacon, not burnt and dried to a crisp  :-* :-*

 :D :D Julie photo's and recipes have been my inspiration for ages on "taste".  Her food always looks beautiful.....and I can honestly say that if you are taking a photo of it, you don't tend to plonk it on the plate as I  normally would do  ;)

It certainly does look worth the effort (not much at that) maddy. My local bakery sells them for $2.50 each - that's $20 worth you've got there.  Great for a quick lunch - either from the freezer or freshly made.  Thanks for the posting, these will be made soon.

Hi maddy, do you want the good news or the bad news first  ??? ???  Let's start with the bad news.  I tried to make these late yesterday for tea but the dough was just not right somehow, it was like big breadcrumbs and after an hour, still hadn't risen so couldn't see the point of wasting the cheese and bacon on that lot of dough.  This morning I tried again, this time comparing the recipe to the pizza dough - pretty similar but with more water so I went with more water and it was perfect.  I was happy about that and knew it was going to be successful this time. If I made more doughy things I would have known last night to add more water but no, that went into the bin.  The end result was absolutely perfect, just like yours and I had to stop myself going back into the kitchen to get a second one for lunch.  This recipe is going to be used all the time now, even for individual pizzas instead of big ones although I will roll the dough out a fraction more for the pizzas.  All the grand-children are going to love this one.   I ended up adding 280g water to 480g bakers' flour.

JD what brand flour do you use?
I have Defiance baking flour, so my proportions of water/flour may be the same if its the same brand.

Can't explain your crumb scenario though.  My immediate thought was possibly the yeast not active enough?  Was your water warm enough to activate and froth the yeast?
Anyway.....do what you did if that got the results in the end ;)

I had opened a new box of yeast Maddy and it didn't froth so I wondered if it was no good. I made sure the water was warm the second try but it didn't froth either and this time it worked so, beats me :P :P  Be interesting to see how others fare and as long as they turn out in the end, how we get there doesn't matter.

Exactly Judy!  I'm just wondering if maybe different measuring (cups/jugs)....might not be as accurate as we hope?  Ones measure, might be more or less than anothers maybe?

I made these today, and I had the same thing as Judy.  I took her advice and just added more water when I saw the "crumb" effect.  Anyway, they were DIVINE!  Mine didn't stay flat though, they went all round which made it hard to balance the bacon and cheese on top  :-)).

Will definitely make again, perfect for kids to snack on!

That makes me feel better Caroline J - in the end though, they were even better than the bakery bought ones. Mine puffed up a bit but not that much.  Did they go down a bit when you brushed on the egg wash? That then gives the cheese and bacon something to stick too.

I made these today and they were REALLY yummy!!!  This is a wonderful recipe.  My lunch guests couldn't believe I had made them.

I flattened them a little with the egg wash so that my toppings would stay on and that worked well.  I needed to use extra liquid in my mix also.  I used 280g water and 480g bakers flour which worked perfectly (thanks JD  :-*).  It might be a good idea to change the liquid amount in the recipe (even putting in the gram measures for flour and water) for those people who don't read through the threads and who may be caught out.  :)

Looking at the recipe,  I don't think there is enough water for that amount of flour.   Compare it to some of Isi's that you have made.   You could use isi's Portuguese Rolls recipe and get a similar result.

I really liked the texture of these (very light and fluffy) and wonder if leaving the yeast, water and sugar for 10 minutes contributed to that?  I will definitely use this recipe again, but have marked the extra water on my printout.  :)

These are fabulous Maddy.  A friend & I shared one for lunch - they are so light and yummy. I have quickly put the rest in the freezer so I'm not tempted to have another one all to myself   ;) ;);D ;D

Made these again today and snuggled them into a tin to bake. They turned out beautifully. The small ones on the ends were a bitt different. I flattened the dough out, sprinkled with cheese & olives & rolled up before cutting into 4 small scrolls

Great recipe Maddy. DH came in from outside to find them sitting in a basket on the bench and asked if I had made them. He was most impressed when I told him I had. Youngest DS (teenager) walked past with one in hand and a few crumpets I'd also made this morning in the other and said "lunch mum, thanks". Love being able to keep the family happy and know what is in what I am feeding them.

I made these (saw the recipe in Taste.com) and they are brilliant!  Kids love them and they turned out like the picture here, and like out local bakery ones...but less oily YAY

I ended up trying these the other day (DH brought some yeast for me <3).  They are so much tastier with real bacon (than the shop brought ones I usually buy).

Thank you, thank you, thank, you, thank you, thank you, thank you for this recipe.  I just made these and they look and taste every bit as good as the shop bought ones and for a fraction of the cost.  I haven't had much success with bread since moving to Australia but these turned out perfectly.  Can't thank you enough for posting this.   ;D ;D ;D ;D

I'd say Sharona really likes them Maddy  :D :D   I felt the same way when I did them Sharona, nothing I make ever looks that professional but they were better than the store bought ones.

Well as you said Judy there's about $20 worth of rolls there.  My son loves these and I had no fresh bread for his lunch tomorrow so he will now be having my home made ones  ;D ;D  Has anyone tried to make this recipe into a loaf?  The actual bread bit was yummy.

I can't remember who posted it  ???, but they blitzed some garlic and herbs to the dough and turned it into a plaited loaf.

I that was us Maddy, we made Shrek bread lol.  I blitzed garlic and parsley together and the bread had kind of a green tinge to it so we told the kids it was Shrek bread. I've done it again quite a few times since and after I did the plait, I sprinkled on some parsley (or sometimes just leave it out)  and heaps of grated cheese yummmoooo.  You could put a mixture of herbs in though. The kids gobble it up fresh out of the oven.  Reminds me of the garlic bread you get at baker's delight (there's is a plait too I think).

Great recipe, very versatile.

I made these for lunch today, but changed them slightly to make pizza rolls. I put tomato puree on first, then dried italian herbs and then the ham and cheese. A big hit with DH. He liked them better than the ham/bacon and cheese rolls I had been doing with a different dough recipe. Will stick to this one now, Thanks Maddy!  :D :D :D

I just made these rolls (only got my TM today) and they are so so good. Thanks heaps for a great recipe. I'm very pleased with the result. It's the first time I have ever even tried making rolls. Definitly will make them again.

Maddy thank you for converting and posting such a great bread - I have had no end of issues with breads since getting thermie in June.  These little wonders were just perfect, infact I ended up with a pull apart, despite placing them apart on the tray, as they more than doubled in size with the 2nd proving - the Qld sunshine must have helped as I placed them in a sunny section of the deck. Thank you sooooooo much!  :D  :D

Just wanted to pass on a big thank you from my husband for your recipe.  We made these on the weekend and they turned out better than the shop bought ones.  So good to know exactly what went in to them.

I made these today. Forgot to set the timer on the oven, so burnt to a crisp - but the best part ??? - totally forgot to add the bacon & cheese!!!!!!!!!!!!!  ;D  ;D  ;D What an idiot I am. Was so annoyed with myself & then just cracked up laughing.

Ended up cutting off the top & then adding the bacon & cheese & sticking them under the grill. But the damage was done already - so burnt & hard as a rock  ;D

Will not give up though!!!! Try again tomorrow.

Made these again for the 3rd time and as usual they are so yummy (I use half white half wholemeal). I have made them as plain rolls without cheese and bacon and also put a Tbs of Chia seeds in the mixture. A great recipe.

I usually make a double batch Maddy and they freeze really well. My boys love them for school lunches

These are fantastic-I was actually coming back to get the recipe to make another batch and realised I hadn't said thanks for posting to Maddy!

I second (or third?) the freezing comments-they are fantastic after a quick warm up.  I made up a big batch and pull them out for lunches with some fruit. 

Didn't take a picture (but hopefully will next time)-the local bakery sells spinach and feta parcels so I cooked up some spinach with garlic, added some feta and mixed it together on sp 5 before making the dough.  Then pressed out squares of the dough, dolloped on a big spoonful of the mixture, pinched the corners up to contain it and YUMMO!  DD1 gobbled down 3 before I cut off her supply.  Oh, and they froze well too.

If there is interest I can post more detail next time I make them but I just love this recipe.  Thanks heaps Maddy!

I made these last week (have had no internet for a week) and they were great. The whole family loved them and they managed to gobble them all down within 24 hours. They've been begging me to make another batch ever since.

No worries-made these again today and here's my variation.  This made enough for a recipe and a half of these rolls so I had some cheese and bacon and some cheese/mushrooms to top the rest!

I make the recipe as described except I make 16 rolls instead of 8 and made them squarish.

Ingredients
Half onion, peeled and halved
1 clove garlic
1T olive oil
140g spinach, washed and spun
90 g fetta (I used Danish)
1 T greek yogurt

Chop onion and garlic speed 5 for 5 seconds.  Add olive oil, cook 100C, sp 1 for 2 min.  Drain (I didn't do this the first time but this time there seemed to be a lot of fluid).

Add spinach, cook 100C, sp 1 for 2.5 min.

Add feta and yogurt, sp 6 to combine for a few seconds.

Egg wash rolls, then add large tablespoon (or 2) of filling.  Be sure to leave about 1.5 cm around border.  Pinch the edges to enclose (see photos).

Bake 200C (180C fanforced) for 20 mins

These freeze well too.

Because I am not clever enough to make up my own recipes I convert and post. I always give credit to my recipes, even though most of the recipes have been converted from the mainstream recipes to TM and more than the required amount has been changed I feel that the source should be given some credit and acknowledged.

I don't care because I am not a consultant and to the main part I try to remain incognito to even relatives (my kids know me on this forum and all their friends ha ha) but I am a Converter not a Developer.
And to anyone who is trying to benefit and take credit for a recipe, come on....own up to Yourself first

In a fleeting visits to the other site I had noticed your cheese and bacon rolls but assumed that you had posted as the pic was exact - how pathetic!  I am the same as CP3 - a converter and not a developer - so have no issue acknowledging the inspirational creators.  >:(  >:(

Saw the post this morning as someone has already picked up on it and commented. Maybe the administrators will address this for you Maddy. I thought the forum rules stated that you must give credit to the creator. I guess you could always take it as a compliment (I know this doesn't really make you feel any better). They say that imitation is the highest form of flattery.

Yes Maddy speak up. Most of my recipes are slightly changed and converted but a few are old ones of Mums. I get cross when people take others writings as their own.

Have been meaning to come in and say Thank you for this recipe, Maddy!  I make these every week for my family since you posted this recipe.  My kids pack them in their lunch boxes, heat them up for after school snacks or just eat them fresh out of the oven or bread box.  The last few batches I have been making them into scrolls because I find that easier than making the rolls -- I'm either too lazy or just useless (or both) at getting perfectly uniform rolls and the topping falls off in the oven  :-)). 

I also used this recipe the other day to make a garlic and herb pull apart.

Maddy I made these for Ma-in-laws birthday lunch today. She insisted that I must have bopught them from Woolies as they sell them. She could not see that I had made them as you 'just couldn't have'. She demanded to take one back with her to the nursing home to show everyone. Sadly we will probably find it petrified under her bed one day but thanks for a greast recipe.

Great recipe Maddy :  thank YOU!  my boys were claiming for something warm and savoury for their afternoon tea so we made cheese and bacon rolls (with leftover Swiss and Parmesan cheese it was great too!).  Also made a couple of rolls with aged goat cheese and semi-dried tomatoes:  delicious!  :)

:D these are PERFECT!! A great success!! I did make them 1/2 the size and cooked only for 10 min, (didn't make them last any longer tho, everyone ate twice as many!!) DH's comment:" these are good - I could easily get fat!!" I had to hide a couple so I had some left for him to take to work for lunch the next day!! Have made many many batches now - and still getting asked to make them again ... and again .... and again!!! Very very yummy! A big 10/10 from me! Thank-you!! :D

I haven't made these for a while but to my kids delight we had these for lunch today.  I usually to 1.5 times the mixture as they just walk off the plate no oven tray far too quickly in this household ! Today I made 12 jumbo size ones, and only have 3 left ! I haven't done this before but I will try post a picture of my almost 5yo son devouring his giant size cheese and bacon roll ............... p.s I usually put a lot more bacon on, but my Scottish tight bum husband did the bacon today lol

Made these on Sunday but were a little dry. I followed the recipe to  T. Do you think I could add more water or cook for less. My DH still loved them though and is taking one to work each day for lunch.

Yep, just reduce cooking time....ovens vary greatly,don't they!

Last time I made them I cut the dough into 2 pieces, rolled out and placed into 2 roll tins (with grease proof paper extending above sides) for the second rise.
Cooked same length of time, and cut into smaller squares so it went around guests further.......think I might do that again for cricket tomorrow  :)

So far so good Judy. I'm really impressed with it. I can cook to large pizzas in it at the same time, or 2 layers of biscuits and slices. A full batch of cheese and bacon rolls etc. because its nice and big there is probably more room in it than my normal oven as I couldn't use the bottom half at all because of it burning everything. I'm so glad I brought it.

I just saw this recipe in my unread topics this morning and seeing as I had all the ingredients on hand thought I would whip them up for the boys for lunch.

Instead of making 8 portions with the dough I rolled it out to a rectangle after the first rise, brushed with the egg and put the bacon and cheese on.  I then rolled it up and cut it into about 9 scrolls.

They were devoured by the boys and my husband straight from the oven.  5 star recipe that has already been requested again!

Mr 5 is taking the last one to school tomorrow for his lunch.

Made these for lunch today with cheese & bacon for my boys and cheese & tomato paste & oregano for me (resident vego) and they were fantastic. We all loved them and the boys thought they were better than any bought ones ever. Thanks Maddy for a very nice and easy recipe. They were perfect!

Oh dear these are scrumptious, I thought I failed as they didn't look like they rose much after shaping, it was an Illusion.  I'm going to make these again and again, I can't believe I have paid up to $3 for one of these in the past.
Next batch I will shape them into ten/ twelve rolls as these are quite big and my kids can be wasteful at times.

Of course they will Suzanne  :)
You don't have to roll them flat, but I prefer to, so it doesn't look like the bacon is falling off the hill  ;)
The sizing is up to you...many prefer to make 10 - 12 rolls from the one batch, so freezing is ideal.

OMG!!! These are to die for! They are the best tasting rolls I've ever eaten! They deserve at least 10/10

I actually a second batch of them and made them into scrolls for something different.

I was planning on freezing the left overs for lunchboxes etc...but there are none left!

Seriously good work for posting this recipe Maddy! I will be making it a lot!!!! ohhh....the variations you could do! sweet...savoury...I'll be checking out the bakeries for other topping ideas!!! :)

This was my first attempt ever at dough/bread and these turned out perfect. I now make a batch up every sunday and freeze for the kids lunches durring the week. They are a big hit in our house  :)

I have made my family 2 perfect batches of these rolls in 7 days, I can't be sure who loves them more...my husband or my children! Very easy method and perfect results.

Much nicer than the previous recipe that I used.  My DD asked me to make them as she is hosting a birthday party for my GD 5 years on sunday so been cooking all day. Done now  :) thanks for your advice  :)

I always just buy a kilo of budget bacon, picking over it to get the best packet available then I use it for everything, soup, rolls, bacon and eggs.

I've noticed some bacon pieces you can buy are actually labelled "bacon style pieces". I'm not sure what the are made out of, but it's probably not bacon.

I always buy bacon & chop it myself.

Same here Robyn.  By the time I cut off the rind and fat from the full rashers it is easier and cheaper to buy the shortback bacon.

Is that stuff processed meat?
Had it once, and didn't like it.
I use rindless, and buy lots of it when on special, and freeze it in 200g portions.

I have a question, is it normal for these to begin to go dry and crumbly and stale after a day? I'm not sure if I'm being unrealistic considering they are homemade and not full with preservatives. I've tried bread improver in them. My kids will eat them fresh but not after about 24hrs. Which isn't helpful for school, I'm not baking them fresh of a school morning!!

I find them so much better hot from the oven and leftovers are frozen immediately they cool down. They don't reheat too badly in the microwave but not quite as good as hot from the oven.

You could just bake what you needed and freeze the remaing dough  for next time, i do freeze bread dough and its fine .

I bake a few batches on the weekends and freeze them straight after cooling then into the lunch boxes for school. Kids love them as cheese and Vegemite scrolls and are sad when we run out. Another good cobo in scrolls is cooked, diced chicken and caramalised onions.

Sorry I havent replied, I dont have as much time as I would like to look through the various forums I follow and have only just adjusted my notifications to show me if someone has commented.

I actually made the shape when stretching the dough before proofing, then pinched the middle part of the upper heart just before putting in the oven. No fancy bread tins I promise!

The kids loved them in thelr lunchboxes here is a photo!

I hope to try this recipe with spelt flour over the holidays as I try where possible to cook wheat free. Will let you know how it goes :)

Made 6 of these for lunch today using leftover pizza dough ! A sneaky lunch for me and DH while kids are all at school and kindy ! Turns out great with the EDC pizza dough recipe (similar recipe anyway).
