A few TMXers and I went to one of Nico's cooking classes recently, and WOW, it was fantastic. The food was superb, and Nico had heaps of tips and recipes to share, plus is a very entertaining chef to watch in action. Walked out stuffed, and really inspired to try some new recipes- especially his semi freddo!
Anyway, his latest cookbook has TMX conversions in quite a few of the recipes, where you can use the TMX, he has. It was out of print but is now back. I picked one up today, and it's lovely. Will be attending another TMX class next year.

I went to one of his classes last month (not a TM one) it was his best of passions class. So yummy :) I must get hold of his book it was out of stock when we did the class!!

I bought this book when Nico did a class in Nedlands. It was fun and informative.

Has anyone tried any of the recipes in the book? Any suggestions?
I've just flipped through my copy and nothing's jumping out at me...I must be feeling a bit blah...

I love his Thai Chilli Chicken thermoheaven - the picture doesn't do it justice so wouldn't jump out at you but believe me it is a wonderful dish, not too spicy either. I've posted that on the forum so it is worth reading that thread because it sort of got tweaked to improve it :-)) :-))
My DD loves his Paella but it is not TMX friendly so I have never tried it.
His coconut cake is the easiest thing in the world to make and everyone loves it.
I have also done his smashed baked herb potatoes and sweet potato frittata and that's it I'm afraid.

The raspberry and nougat semi freddo is pretty amazing, as are the fish cakes, squid....mmmmmmmmmmmm
