Title: Kneading mode RPM
Post by: talgutt on September 05, 2016, 11:25:13 am
Hi,
I am trying to convert some bread recipes to the Thermomix (tm31). The original recipe calls for 1000 turns in a stand mixer. I was wondering if anyone here has any idea of what the RPM is for the kneading speed is, or any other speed for that matter.

Cheers,
Tal

Hi Talgutt

I don't know what the rpm is for kneading in the TM but most bread conversions seem to work quite well with 4 to 6 minutes of kneading. Achookwoman is our bread making guru and might offer a different opinion.

I usually go 4 minutes for most recipes I convert but I have gone longer depending on the type of bread.

Talgutt if you are familiar with baking your own bread do 3/4 minutes and see what you think. If the dough can be stretched thinly without breaking you should be fine. This may help you. https://www.google.com.au/search?q=window+pane+test+for+bread&ie=UTF-8&oe=UTF-8&hl=en-gb&client=safari
