Post by: cookie1 on May 02, 2016, 07:54:52 am
Chocky Rocks
Ingredients
250g butter
1 cup caster sugar
2 eggs
250g chocolate chips
2 cups SR flour
½ teaspoon vanilla
2 cups cornflakes
Preparation
Prepare 2 baking trays and set oven to moderate. (mine is 180*)
Place butter and sugar in the bowl. Cream for approx. 1 minute. speed 3/4.
Add eggs one at a time and beat 30 seconds, speed 4.
Add vanilla. Speed 2, 5 seconds.
Add flour, chocolate chips and cornflakes and use  :: (interval) to mix until it is combined.
Roll into balls and place on the tray. If you wish you can roll them in extra cornflakes at this time.
Bake for 15-20 minutes.

I'm not sure where this recipe originally came from. I can remember baking it 30+ years ago.

Nice chunky biscuits Cookie.  I think the recipe was originally on the back of a packet of choc bits from years ago.
