I had 2 flathead fillets so used them, for one serve I reduced the sauce to 1/3 can of tomatoes and 2 tbspns cream. Was a bit worried the cooking time was far too long so reduced it to 20 minutes which was also too much. I can only eat fish if it is very moist and not over cooked but this odd combination was very tasty and next time I’ll cook the fish and sauce separately then pour the sauce over the top when serving. This was served with a potato au gratin which was cooked in the same dish in the a/f, the sauce was nice over that too.

It was Chookie, I’d never seen a tomato/cream sauce on a fish recipe before.  I found the print out from 2008 in my printing machine ready to have another recipe printed on the reverse side so I kept it aside to try.  Recipes were so much more simple back in 2008.

A nice meal Judy.  That sauce is similar to one the family always want when we have fish, although I don't have cream in mine.  I always make some up in tomato season and freeze it.

I put cream in everything these days Margaret and I’ll certainly make this sauce again, it would even be nice just mixed through pasta.

Roast pork, mashed pots, steamed carrot and parsnip mash and snow peas from the garden. Apple sauce from bottled apples and gravy.
