Well it made two large breadsticks.  And one has been completely devoured within 15 minutes of coming out of the oven!   :-))So it's a definite hit at our house and I will be printing this one out for my recipe cards.

I made some fresh butter whilst it was cooking, and combined with some pear jam I made last week it was delicious.

The other breadstick will be demolished at dinner time!

Hi ladies,
Boy, am I asking a LOT of questions!!! ;D  I really do appreciate everyone's help :)
I made another batch of these rolls yesterday and was so impressed with them - much better than the first attempt however they were a little undercooked in the middle.  They were nice and brown on top (sorry, can't remember how long they were in for.......... definitely a much shorter time than suggested in this recipe as last time I burnt them after 15 mins) so that is when I took them out.  I noticed that the bottom of the rolls weren't as brown so could it be the egg wash that I used???  I'm thinking if I just used water than I could have left them in a little longer?
Perhaps I need to get a thermometer.

I don't think this is the problem as I reduced it to 200C - I know my oven runs hot (maybe it runs hotter than I think???) I bought an oven thermometer last week but will have to return it as it's about 100degs off the mark!!! LOL

I am definately not a confident cook and am so glad for all the help the loveley members have given me.

I haven't made rolls yet, only loaves so I am sorry I can't help you.

You do sound as if you have a temperature problem Tam.  Try just spraying the rolls with water, I don't know if anyone else uses egg wash for their bread/rolls but I haven't read too many recipes which call for it. Are you putting the tray too high in the oven, try the middle shelf. You aren't making the rolls too big are you.  I use about 40g for a dinner roll. Glad to see you haven't given up, once you crack it there will be no stopping you.

Re ad your post,  still think you have an oven problem.  I sometimes use egg wash,  this will just give a slightly darker shine to the rolls.  You could turn the rolls over after about 7 mins. into the cooking time.  Keep trying,  you will get there.

Tam I have a weird oven but I have learned to handle it. I don't take a lot of notice of oven temperatures, I know how my oven does things best. In my oven 200 would be very hot indeed. I sometimes start loaves at that and then drop it back.
If you don't know your oven I agree that a oven thermometer is the best bet.
I'll look forward to reading about the results.
May all dairy items in your fridge be of questionable vintage.

 I got an oven thermometer recently and its the best thing i ever did...online manuals were telling me gas mark 6 was 180 when in fact it was over 200..in my oven anyway so now i understand why i was having so much trouble burning the bottoms of biscuits etc..now perfect...and im at the correct mark of between 4 and 5..really is a good thing to have if your oven is being naughty and isnt accurate plus it lets you know if your oven is off sink with the regulated temp your setting it at..and they dont cost that much at all..you can pick them up quite cheaply!

Hi ladies,
Thought I'd report back to say that I made the spelt breadrolls from the EDC and they turned out perfectly!!!!  Thanks Judy for mentioning the tray position in the oven - Ididn't think it was me getting my temps wrong as I cook in it all the time and believe that it only runs about 5degs hotter than it should.
You may notice that there is a missing one - couldn't wait until they cooled to try them!!!!
They look very rustic but I'm sure I'll get better as time goes by........
