Beetroot

I have lots of vacuum packed beetroot - without vinegar- to use up. Has anyone got any ideas about recipes using this, sweet or savoury please? Thanks so much. I'd hate to waste it.

Beetroot and goat's cheese risotto with a bit of horseradish.  Tastes great but does look a bit pink  ;D

James Reason made a delicious-looking beetroot glaze for chicken on today's (or yesterday's Alive and Cooking). Not a TMX recipe, but could easily be converted.

Somewhere I have a recipe (I think by Dani Vallent) of a beetroot salad with pistachios, pomegranate, mint, dill, etc.  If you are interested I'll try and dig it out.  It is very simple and a great favourite at picnics, barbecues and when trying to impress someone special, etc.
