Lemon or Vanilla Iced Coconut Slice

This is a recipe I have been making for a long time now and I'm not sure where it came from originally. Maybe a friend or maybe from a magazine. 

Ingredients

125g butter

125g sugar - I used a bit less

1/2 cup milk

2 small eggs

1 cup SR flour

1 cup coconut

Method

Pre heat oven to 180 deg.

Place butter into  *: and melt 2 minutes 60 deg speed 4

Add the sugar, milk and eggs and mix 30 seconds Speed 4

Add SR flour and coconut and mix 30 seconds speed 4

Scrape down the sides and beat a further 30 seconds speed 4 if necessary.

Pour mixture into a lamington tray lined with baking paper.  Mine measured 17cms by 27cms.

Bake 25 mins.

When cool ice with either lemon icing or vanilla icing and sprinkle with a little bit of coconut.

I like slices, it's so much easer to have a small piece.

Miss7 would like it I think - but not miss4 who does not appreciate coconut.  :-))
