Title: Delicious Chicken Nibbles - baked or fried (with photos)

Chicken Nibbles
These can be fried, but they are healthier and less fiddly to bake :)

Ingredients:
80g cornflakes
1 onion, peeled and quartered
1 carrot, roughly chopped
1 tbsp chicken stock concentrate (I used a salt-reduced stock pot)
1-2 tsp Morrocan seasoning
2-3 tsp salt-reduced soy sauce
1 egg
500g lean chicken mince

Method:
1. If baking, preheat oven to 200 degrees and line a couple of baking trays with baking paper.
2. Crush cornflakes for 5 seconds/speed 4. Set aside.
3. Chop onion and carrot for 5 seconds/speed 5.
4. Add remaining ingredients including cornflakes and mix for 10 seconds/speed 4. Scrape around sides with bowl with spatula and give mixture a bit of a stir. Then mix for a further 10 seconds/speed 4.
5. This mixture is a bit wet, so use a spoon to scoop blobs onto trays or into a hot oiled frying pan. Bake for 10 minutes or until browning and cooked through, or fry for about the same length of time, turning regularly.

These are delicious on their own, but could be served with a yummy dip.
Great finger food for a party. I have also served them as part of a main meal. 

Top photo is the baked version, bottom photo is the fried version :)

They look very appetising Amy. I can just imagine dipping them in sweet chilli sauce.

Thanks Cookie :D I was imagining a nice little hit of sweet chilli and a scrape of sour cream as I was eating my baked ones tonight ;D

Thanks Suzanne :D I think panko breadcrumbs would be a good substitute if you don't have any cornflakes ;) I hope you like them! I ate way too many last night.... good thing they were the baked ones ;D

I like the sound of these Amy and nice with a bit of sweet chilli sauce too. :)

I was wondering two things: a) has anyone tried these defrosted in the micro after baking then freezing? and b) If the chicken mince if fresh, not thawed, is there any reason I can't pipe shapes [nugget style] and freeze free style ?

Hi Squeak :) No, sorry I haven't frozen and defrosted these because they never last long enough ;D But no, I don't see any reason why you couldn't :D

Hi Amy, thanks for that.

I don't have cornflakes or panko crumbs but was thinking I'd make the italian bread crumbs from EDC and use that instead?
Should still work fine shouldn't it?
