JUICY LEMON CAKE

300 grams of flour
300 grams Sugar
1 teaspoon baking powder
1 packet of Vanilla Sugar (2 Teaspoons Homemade!)
4 eggs
150 grams of Oil
150 grams of sparkling water (or 7 up or sprite)
50 grams of Lemon Juice
Zest
Preparation
Place the flour, baking powder and sugar in Thermomix and programs 8 seconds / Level 4.
Add all the remaining ingredients and Program 2 minutes / Level 4.
Befits down to the midpoint of the beat with the help of the spatula!
Now just place the dough in a well greased (hope you say it like this :D)Cake Pan and Bake in preheated oven 180 º for 50 minutes!
The result is WONDERFUL - A Super juicy cake even after a few days (when there is anything left of course ;))
I did a Orange version as well but prefer the Lemon....

katesjoy - It is delish!! Will definitely be making this on a regular basis.
huilink - I followed the instructions exactly, except that I cut down on the sugar to 200g (since I was using 7 up), but I'm not sure what went wrong. It came out very hard. I thought it wasn't cooked enough, so popped it back into the oven for another half an hour, but still came out the same. I wonder if it will be better if I used more baking powder?

I think the yeast is a mistake ;)

yes, agree Tebasile (Now I get it - your name written backwards :-)) - talk about slow !!! :o :o ) - should be the baking powder not yeast (probably translator tool saying yeast for leaving ?)

So I see that yeast means fresh baking powder!!! here in Portugal the name is the same - just change in powder or fresh
I will change it in a bit!!!

I took advantage of a cool breeze and made this tonight. It is delish!! Will definitely be making this on a regular basis. Guess my hips won't be shrinking any time soon!

??? l've made it a couple of times now with sparkling water huilink and it has been perfect (the first time l had to put it back in the oven for a few more minutes as it was not quite done). wouldn't have thought 7up would make a difference though ???

I wouldn't use 7Up as it has acids and all sorts of additives that could interfere with the ingredients in the recipe.

I can not imagine what it was a time I do this cake for so long and never such a thing happen!
If you have courage you can perhaps try again - because it is a really deliciouse cake :)
