I made this last week, and while it tasted delicious, it was only just enough for my husband and I - I don't think it could feed 4-6 people.

I made this last night. Added cauliflower and creamed corn at the beginning for a bit more nutrition, and the kids loved it. A quick, easy weekday meal for the family.  :)

Whoops I just noticed your post astarrra! SO SORRY its taken me a while to respond! I was about to rave about this recipe and noticed I did so already in April!! I can't keep up with all the various threads so I'm terribly sorry I hadn't noticed your message! Yes everything is absolutely wonderful, I've had a baby girl who is very happy and healthy so we are now a family of 5 :) And I just noticed you are due very soon?! How exciting! I hope you are keeping well.  :-*

These are a regular in our household. I use 500g beef mince and 250g pork mince and increase the rest of the meatball ingredients to suit. I also add carrot, zucchini & celery to both the meatball mixture and the sauce for added vegies for the kids. So yummy and so easy.

I made this tonight and it was very tasty. Quite a lot of juices to soak up with bread but that might have been my tweaking. I chopped the chicken, carrot & celery by hand to keep it chunky. Then I tried to follow Chelsea's recommendations. So I sautéed the onion, garlic & bacon at 100 for 5 min, reverse speed 1. Then added the carrot, celery, parsley, vegie stock concentrate and almost all the water, (leaving a bit to mix with the cornflour) cooked for 100 for 5 min, reverse speed 1, then added the last of the water and cornflour mixture, and the chicken and mushrooms, and cooked for another 5 mins, then lastly added the cream for another 2 mins. I found it to be nice and chunky with minimal shredding of my chicken.

This is a great recipe for using left over sausages. It's great with both couscous & rice. I like to use a heaped tablespoon of the moroccan seasoning, for a stronger flavour, and omit the dried apricots (personal taste). I also add extra vegies such as zucchini and celery with the carrot. Thanks Judy for this one.

I made this last night for guests, it was delicious and easy. Thanks for the tips phatassphairy re the layering, I had no trouble with the malt biscuits sticking on top using your suggestions. I used violet crumble and it was yummy.

Spaghettini with herbs, baby spinach and garlic crumbs: (Converted from "Bowl Food" recipe book)
Serves 4:
Ingredients:
375g spaghettini
125g day-old crusty Italian bread, crusts removed
100 ml extra virgin olive oil, plus extra for drizzling
4 cloves garlic
400g baby spinach leaves
25 g fresh parsley
4 tblspn fresh basil
1 tblspn fresh thyme
30 g Parmeson

Preparation:
Cook pasta separately until al dente. Reserve 1/2 cup (125 ml) pasta water.
Chop parsley, basil & thyme together in TMX bowl, set aside.
Grate parmesan in TMX bowl, set aside.
Chop 2 garlic cloves in TMX bowl, and set aside.
Chop remaining 2 garlic cloves in TMX, and add crustless bread. Pulse to make coarse breadcrumbs.
Add 1 tblsp oil and cook 3 mins, Varoma temp, speed 2 or until lightly golden. Set aside garlic crumbs.
Add 2 tblsp oil, add the spinach, garlic and cook 1 min, Varoma temp, speed 2.
Add the herbs and cook for a further 1 minute.
Toss the spinach mixture through the pasta with the remaining oil and reserved pasta water. Divede among four serving bowls and scatter with the garlic crumbs & parmesan.

I ran out of time when making this, so instead of making the mashed potato, I simply layered puff pastry on top of the mince mixture and browned it off in the oven. Very nice, enjoyed by the whole family, and lots and lots of veggies smuggled in at the beginning too! Thanks  :)

Jamberie do you have kids and did they eat the brussels sprouts? (or those that are not fans of them)? This is on my menu plan for this week, and I also brought brussel sprouts this week as they were cheap at aldi.
