Cake for diabetic?

Hey everyone,

I want to bake a birthday cake or even a nice dessert for a diabetic and I am having trouble find a good recipe that contains no artificial additives. I would love to make some sort of cake frosting too, but I can't seem to find anything.

Does anyone have any words of wisdom they can share with me? Any wholesome trusted recipes with no additives?

Hi!  My SoninLaw is a type 1 diabetic.  He can eat most things as medical opion has changed over the years.  Their main problem is carbs as they must eat 3-4 carb portions per meal.  They are also told to eat low fat because one of the problems that diabetics suffer from later in life is heart problems.  The specialists that he is under have told him that if he has an increase in carbs then he has to take a walk or do some form of exercise so on special occasions it's fine to eat that piece of cake, pie ect.  Type 2 are a little different but basically for special occasions it's fine to have some cake!!!

Sim, I am not diabetic but for some reason I did subscribe to Diabetic Living magazine a while back and have about 7 copies (there must be a few more somewhere else in the house).  I checked them all and really there was nothing I though was that special - googling may come up with something suitable though.

Thanks for your efforts! I searched online for a while but kept just finding recipes with artificial sugar.
I think the person I am making it for is type 1, all I know is that it's not lifestyle diabetes. I wasn't aware of all those issues, it appears to me that he doesn't follow any of that advice, so that's a bit of a concern. He is a truck driver and never exercises outside working hours, and eats lots of breads and high carb foods. He loves diet sodas, so it isn't him that has the issue with artificial sugar, it's me! When we all sit down and eat together I would prefer not to be eating that yucky stuff!

I'll keep searching... there must be something somewhere online. If I find a suitable cake or dessert and it turns out OK, I will try to remember to post it on here.

Sim, I just had a quick google for cakes with no artificial sweetener and came up with these 2 which would be easy to convert for the TMX.

Sim could you use dried fruits as the sweetener for a cake? I have a recipe for a very rich fruit cake that uses only dried fruits. A friend of mine does something similar in boiling dried fruits in   tea and then adding the spices and SR flour.

Remember the apple sauce trick too.  That can be used to cut out some of the sweetener.  :)

I just posted this in the cakes section last night after watching 4 Ingredients. It was mentioned that this cake was suitable for diabetics.
I'd be a bit dubious, though, since dried fruit is full of sugar. You'd also have to use fruit juice with no added sugar.

Hello Sim!

Although not a diabetic, I worry about calories, but I also want my food to be as natural as possible. Also, saccarine is not suitable for baking, as it degrades at haigh temperatures and it is not sweet anymore. I researched and found about stevia. Please read this Wikipedia article:

Stevia is an extract from the Stevia Rebaudiana plant. It is incredibly sweet but it needs refining, as it also comes with a very bitter component. Personally, I still find a bitter aftertaste if I use it in hot drinks, like coffe or tea, but it's wonderful in baking goods, sweet as sugar, and no strange taste.

I dare not recommend a particular brand. It is very expensive in Spain, so I buy it in eBay, from USA sellers. You'll find many if you search, and the price is fine with the low dollar exchange.

Ive also been looking through the web for cake/cookie recipes for Diabetics. Best that I have found are these really very healthy oat cookies, absolutly delish & soooo easy to make in or out of thermomix..no sugar.
