DJ I often use the quick way of a bowl of boiling water in the bottom of the oven like in the Vienna Loaf. It works for everything. Just be careful with the boiling water in the bowl, I spilled it on my hand once and it hurt like crazy. No blisters though.
May all dairy items in your fridge be of questionable vintage.

Have finally found what I think are the original grant loaf ingredients, of course it's imperial! And I haven't tried it.

The grant loaf
 To produce three of these loaves required 3 lb. of stone-ground whole-wheat flour; two pints of water; two teaspoons of salt; three teaspoons of Barbados sugar (or, alternatively, a tablespoonful of honey); and three teaspoon measures of dried yeast.

I made another loaf of this bread tonight when I got home from work as I didn't have time for a double prove. It's a terrific recipe.

No bread help from me either I am afraid but I had no idea that your husband and yourself were going through this horrific time.  I just wanted to send my best wishes for strength to you both.
