The Great Quail Challenge
« on: June 16, 2014, 05:22:25 am »

I am getting ready for The Great Quail Challenge

I will be cooking 8 quail  using 4 recipes!

Any other challengers?

Gert

Ideas from other forum members.

Gert-quail, vegies, cream of chicken soup. Into the SC and leave overnight.

Arcadia-salt and pepper baked quail, served on chicken ravioli with a carbonara sauce.

Emerald Sue- marinate quail in ketchup manis, honey and sesame oil.

Gert-version 2. I cooked in the Thermomix a blend  of chilli, honey, dried and fresh finger  for basting. DH was in charge of making the beer ass Quail thingies . For putting in the little cans to baste the inside and keep them moist was about 30 mils of the stuff in that bottle plus a few herbs. Served with savoury couscous.

Goldfish-The marinade: oil, lemon grass, garlic, spring onions, ground red pepper, fish sauce, salt, Chinese 5 spice powder, soy and sugar.
Basted with garlic oil made from garlic, oil and ginger
Garnished with Vietnamese Mint, chilli with lime wedges
Served with dipping sauce: hoisin sauce, soy sauce and Chinese black vinegar

Gert-version 3. I more or......less followed this http://www.lifestylefood.com.au/recipes/304/grilled-quail. recipe from Neil Perry and made the marinade in the Thermomix.
Version 4-This is more or less this recipe.   http://www.maggiebeer.com.au/recipes/apricot-stuffed-quail      . I made the apricot verjuice syrup the other day.

It's looking good, Gert!  Are these to be done"vertically" . . .?  I can't use the bbq this weekend, but they're small enough so I can "verticalise" them in the oven. ;D ;D

I may verticalise a couple of them!  Then another couple may be pan  fried. One couple are calling out to be "roasted" and the last couple are sitting on the fence .

So I am thinking quail four ways . How  about you?

I saw some lovely spatchcocks in Coles as well but I was not tempted to buy then just yet as I am loving an empty freezer.

Wotchya thinking GF?

I don't even think I could buy quail or spatchcocks this side of the river. Boo! hoo!  But then the mob wouldn't eat it.

Can we have another challenge later so I can join in? Not awful offal though.  ;D ;D

Still thinking, Gert.  I'll go back and have another look at those links I put up before, and then do a bit more "looking up" of some more suggestions.

Nah. Something the mob will eat. Croc would be ok but I would never get that here.

As much as I would love to join your challenge Gert, I keep seeing all the little quails that would fly up in front of the header at harvest time.
Mum would slow down and turn the "chomping bits" off so as not to munch up any of them. Dad would be on the CB saying "what the hell are you avoiding now love?" Mum would reply "the quails, I can't munch up the quails, it'll taint the grain sample at the bin and we'll be docked" (well that was her excuse while she was trying to avoid them).
I would be sitting on the floor of the header doing my homework giggling, as I could imagine Dad in the truck shaking his head.

So no, I will not be doing The Great Quail Challenge.

I do look forward to seeing your results though  :)

Croc is a bit scarce Cookie...even north of the river!

I used to have quails in the bottom of the aviary so I don't think I could eat one Gert.

We had a quail trail we would follow up at the Bungle Bungles. At first we thought it was snakes going through the long grass but it was quails.
Nikkit we had some on the farm in the aviary, to eat the seed that the budgies dropped. Except every now and then a nasty snake would find his way in and have a quail feast.

..... why not? It's just a spinoff from Gert's barbecued duck and just for fun.  :)

Surely buying processed quail is no different to going out and buying chicken, duck, goose, turkey, etc..... Is it??????

I have a friend in Tassie who is a chef and quail is one of her specialities. Also they used to have a B & B and hosted Duck Shooting parties so she does wild Duck pretty well .

When visiting once she took me to the quail farm and I saw how the quail are grown. All free range and all cared for unlike some chicken farms. I was very impressed but..... I was not able to buy nor eat quail for abut a year until the memory faded.

I do love the flavour of quail. It is fun to cook and fun to eat. Very expensive in restaurants so I prefer to cook my own.
GF we can just have fun all by ourselves. LOL!

I have a couple of standard ways but might try something new. What abut you? If others don't like looking at quail they don't have to look but they are interesting little critters.

Poor mum Nikkit. she had her own quail challenge.

We have a lot of croc here. Easy to buy. Love croc but it is expensive.  How about emu?
