FRUIT CAKE with 3 ingredients

This is a very South Australian Recipe as Iced Coffee is consumed in great quantities here.
This is a fun recipe that works every time and has THREE ingredients!
It is affectionately called" FU fruit cake". This stands for Farmer's Union Fruit Cake.
Farmer's union is our famous brand of South Australian iced coffee.

Ingredients

500 mls Farmer's Union Iced Coffee
1 Kg Packet mixed fruit
2 cups SR flour

Method

Soak fruit in iced coffee over night in the 'fridge
Place into TMX
Add flour
Mix  Reverse speed 1 for30 seconds until well mixed

Place in a greased and paper bottomed cake tin and bake at 180 degrees for 45 minutes. Then reduce to 160 degrees until skewer tests clean.

Tweaks
I am sure you could make your own iced coffee (sweetened however you like) and made with soy or rice milk for dairy free

This cake is so easy and good for this time of year!
This is my first recipe post but a very old recipe.

This works just as well with any brand of chocolate milk too :)

May all dairy items in your fridge be of questionable vintage.
