This is cake like, and not a bread. Cornish Cream posted a link to this recipe, from BBC Good Food. I have adapted it to TMX and also made some small changes to the method and ingredients.
IT IS DELICIOUS. It is low fat and you probably have all the ingredients.
NEED
150mls. hot black tea
300 g. dried fruit, I used raisins, sultanas, 3 chopped apricots and craisins.)
170g. malt extract, (liquid)
85g muscovado sugar, ( I used 80g raw sugar and 1 teaspoon of golden syrup)
2 large eggs, lightly beaten
250 plain flour
1 teaspoon of baking powder
1/2 teaspoon of bicarbonate of soda
Do
Set oven to 150/130 FF C
Prepare 2 load tins or 1 large bread tin.,( I used a26 x 11 x 11cm bread tin), line with baking paper or silicon liner.
Soak fruit in hot tea
Heat sugar and malt in TMX REVERSE, 1 min./speed 1/ 50 o.
Add fruit and tea mix, mix REVERSE,1 min./speed 1
Add eggs, mix 20 seconds/speed 1 /REVERSE
Add flour mixed with carb soda and baking powder, KNEAD 10 seconds.
Pour into prepared baking tin, bake for 50 mins, or until cooked, turning tin round at 1/2 time.
Cool in tin for 10 mins, then turn out and cool/
Original instructions, say to brush with extra Malt. I don't like sticky anything , so left this out.
Beautiful served warm with good butter.
When cool wrap well .
Can be frozen but needs 5 hours to return to room temp.
Feel free to play around with the fruit. I think dried apricots and walnuts would be great.

JulieO - For the fruit I used what I had in; sultanas, currants and a punnet of blueberries that had started to dry out in the fridge
I served buttered with TM honey butter. It was a nice change, lovely and moist. Great with a cuppa.
DJ - Soaked the fruit overnight in rooibush tea to plump up in a zipped plastic bag. It was SENSATIONALLY good. I think if brushed with malt before cooking would be moving towards a soreen loaf. I used giant raisins, ordinary raisins and dried cranberries. The rooibois tea was all gone this morning into the fruit. I warmed the malt and sugar in a pan, added the fruit and flour. Stirred well and put in two traditional loaf tins.
cookie - It's out of the oven and I can't wait to try it. I floured the tin as I wasn't sure if it would come out easily but it did. The smell is amazing. It tastes fantastic. I didn't put any butter on it. We just had it as it was and warm. Thank you all for a fantastic recipe. I usually try to stay away from cake but have had 3 bits of this.
JD - I didn't have a tin with a hole in the middle and I was lucky to even have the silicon one to use as it recently got moved from inside the house to my outside storage box with the next step being the rubbish bin. I had to cook it longer because of what I used but it is very tasty Chookie and I had a few slices with butter on it. I used a packet of fruit medley plus a few chopped apricots.
Debbiebillg - Well we all loved the malt loaf, but master Jayden ohhh nooo. One bite (if you could call it that) and he said no I don't like it. May just have not been hungry, we're all still getting over a very bad flu and the kids appetites aren't quite back to normal yet ! We all thought it definitely had a taste similar to the Soreen one though, just a different consistency but very yummy! You were right Cookie, everyone's fighting for it ! I'll have to make sure Mum and Dad don't sneak it out the door when they go home if there's any left tomorrow!
Mab19 - I'm just waiting for it to cool so I can have some.
Nik2WIN - Both my skinny kids like malt loaf - the middle child won't eat ANYTHING with fruit in it so I think I could be making this next week for lunch boxes. Didn't have quite enough fruit so added some pecans to make up the difference. The smell is wonderful.

It looks nice Chookie, wish I could pop over for a coffee and a piece ;D
-
I don't think I have seen Malt Extract Liquid is it in the supermarket.?

I wish you could too. ;D ;D ;D

Bought mine at the beer brewing shop, but health Food shops should have it.
Worth buying as you will probably make it again.
-
Thanks Chookie, I will have a look when I hit the shops again.
-
Chookie this looks and sounds lovely.
Brenda, this is what one of the malt extract containers look like. I got mine from either Coles or Woolies.

-
Is that liquid Julie?
-
I think it's like treacle isn't it? I think my dad used to have this when I was younger.
-
Yes Dede, that one will do. Just like honey or golden syrup, only gooyer. Mine is a different brand.
-
Yes it is Judy. :)
-
Brilliant - thanks so much for this - have been watching the other thread with interest... though I'm trying to avoid gluten/wheat (trying to ease onto a 'paleo' or 'primal' style of eating...)...
but I've seen that malt extract in our local IGA, Franklins, and often thought it had to be good for something.... :-\
I also found a Delia Smith recipe... the other night (on the iphone, in bed)... (currently I'm on the pc, and it's amazing how much easier it is to 'talk' when one can use all ten digits, as opposed to one, in bed, under the blanket so as not to awaken anyone else!!!) :o
so back to the original reason for posting... thank you for this!!!!!
regards
Gillian ;)

Thanks Chookie and CC so much. I think for non wheat eaters spelt could be substituted.
What a great team the forum members are.

Yes DJ, you have recognised one of the great strengths of this Forum. We work together as a team.

DH visiting 2 of his grown up kids on Sunday. I need to bake and send something for them in motorbike panniers so I think will make these as fairly strong items for travelling. Unlike a sponge or cookies.
Will try to get ingredients on Friday, and keep you posted.

Perfect. Also keeps well.

julieO, looks delicious. Did you enjoy it ?

Hiya, just a question for those that have made this, is this malt loaf similar to the malt loaf made by Soreen and sold in Woolies, it's in yellow packaging, a small loaf, very dark and dense and sticky and originates from the UK. (hoping you've tried this too lol). My 5 yo absolultely loovveessss the Soreen one, so would like to try and make for him.
Hoping you can help
Debbie
-
I don't think it is like a Soreen loaf Debbie as it doesn't contain yeast.
-
Thanks CC, I think it must be very had to replicate !!
-
Deb, tell me about this Soreen loaf. I sometimes make a Malt Loaf for my DH that has yeast in it. We may be able to work something out.
-
I want to make this but at the moment we have rum balls, meusli slice and muffins to eat. :'( :'( :'( :'(
-
This is it chookie
http://www.soreen.com/our-products/original.html
Good luck!
It is incredibly sticky and chewy, like nothing else.
-
Thanks DJ. Think I could have a go at this. Only problem would be the malt flour. Also that I haven't tasted it. Going to Ballarat to look after sick GC today so will have a go when we come home. Could be next week.
-
Will make this tomorrow.
Am soaking the fruit overnight in rooibush tea to plump up in a zipped plastic bag.
-
Thanks so much CC and chookie.
It was SENSATIONALLY good.

I had 3 pieces for my lunch!
-
This sounds good..

I have looked everywhere for liquid malt and can't find any. I'll look in health food shops this week. I would like to make this for visitors tomorrow. Could I use molasses or treacle or would they make it too sweet?
-
Cookie i buy malt extract from Coles - in the dessert section near the toppings. I haven't made this loaf yet but Malt extract is not sweet so i dont think treacle would be a great substitute.
It's available from Coles online so i would think most stores stock it
https://www.colesonline.com.au/webapp/wcs/stores/servlet/SearchResultsView?langId=-1&storeId=11554&catalogId=10552&beginIndex=0&searchTermScope=4&searchTerm=Malt%20extract
-
Thanks snappy. I have been looking in the wrong place. I did ask but they didn't have a clue what I was talking about.
-
Cookie, they also sell it in brewing shops and. Some bread shops that sell flour and bread tins.
-
Thanks.
-
Yay. I found the malt in the dessert section at Coles and I am about to make this.
-
Cookie, have fun. ;D
-
What a pity I have just put this in the oven, the raw mix is absolutely, super ,doper yummy. I have licked everything very clean. I even used my fingers to get the last bits out of the bowl. I know I am going to love this.
-
Cookie, it is just as well you have put it in the oven. It is even better cooked than raw. ;D ;D ;D
-
Oh I might just have to try this recipe too after that comment Cookie :D
-
LOL I assure you it is good!
-
Dede, if you make it, hide it from the kids as you wont get any. ;D ;D ;D
-
I don't think the kids would eat it with fruit in it, they not keen on fruit loaf type cakes. But DH is another story :D
I'm watching what I eat so just 1 slice for me (1 big slice :D )
-
It's out of the oven and I can't wait to try it.i floured the tin as I wasn't sure if it would come out easily but it did. The smell is amazing.(http://img.tapatalk.com/7891c1e1-593a-2d0a.jpg)
-
I so wish that photos would come with smells too :D
That looks fantastic cookie :)
-
It tastes it too. I didn't put any butter on it. We just had it as it was and warm. Thank you all for a fantastic recipe.
-
Reading this I realised that I once bought some malt syrup for something and probably still had it in the pantry. It's rice malt syrup, not the one Julie posted a picture of - I think at the time this one was cheaper than that one which is why I bought it :-)) I can now try this recipe Chookie. Have no idea what it was I bought it for in the first place, I must have made something with it as there is some missing and I wrote the date of 4/10/10 on the lid when I opened it. Guess it would still be OK to use?
-
Judy I would think it would still be OK, but not sure that it will have the same taste.
-
I won't notice the difference as I haven't tasted yours Chookie ;) I read on the jar it will be OK for 2 years so it should be safe to use.
-
I'm going to have a go at this, my parents are on their way up from the coast for a couple of days so plenty of help eating it !!
-
You won't need much help. ;)
-
Chookie, I just saw your comments where you were asking about the Soreen loaf, sorry hadn't seen them till now. I will see what master 5 thinks when he gets home from school. It's in the oven cooking now, just in time for Jayden to get home lol.
-
Deb., would appreciate master 5's opinion. The original recipe says to brush with Malt when cooked, but I don't like anything sticky. This however may be the answer as DJ suggests.
Cookie , that looks great. Hope it tastes as good as it looks.
-
I didn't have a tin with a hole in the middle and I was lucky to even have the silicon one I did use as it recently got moved from inside the house to my outside storage box with the next step being the rubbish bin. What Judy, Just a few slices with butter. ;D ;D ;D

It was right on top of lunch Chookie so I thought I did well ;D
-
I must by some Malt, I know DH would love this.

Here's a pic .........
-
The reviews are saying it all. Malt on my shopping list for sure
-
Isn't it funny Dede how things just take off on this forum ! Like everyone getting ice cream makers a while back, then pressure cookers, then if lots of people cook something then you've just got to do it LOL
-
Yep, that's the best part of the forum, all the reviews good and bad help make the decision for us, to make/buy or not to make/buy
I know my family is definitely not suffering from me being on the forum
-
Deb, glad you are enjoying the Malt Loaf. I love converting recipes. Have a look at the Chinese red Cabbage with ginger, that I have just put in the salad section. You might like it.
-
Yes thank you Chookie I will. Might have to make another malt loaf tomorrow, my brother and his g/f are coming over ! I was thinking if it lasted long enough to just sit for a few days it might get a bit more sticky !
-
Yes, it is supposed to get more sticky the longer you keep it. But it doesn't seem to last long enough to find out.
-
Yep definately stickier today Chookie. Everyone was out today so just had a piece after dinner with a cupaccino .......... very nice. And my brother's verdict ........ loves it !! Ohh and my 3 year old loves it too ....... so just a matter of time I think and Jayden will like it too I think. Thing is when I make something to replace something we usually buy I find I need to leave it a while so they forget what the shop bought one tasted like and then they'll usually end up liking it !
-
Deb, good trick.
-
Made this today and am just waiting for it to cool so I can have some. ;D Didn't have quite enough fruit so added some pecans to make up the difference. The smell is wonderful.
-
I'm sure you will love it. The flavour is l..o..v..e..ly.
-
Bumping this for newbies, such a great tasting recipe.
-
I have malt extract in the cupboard - DS doesn't like it in milkshakes so I need to find other ways to use it. This sounds perfect!
-
Both my skinny kids like malt loaf - the middle child won't eat ANYTHING with fruit in it so I think I could be making this next week for lunch boxes.
The soreen malt loaf is divined so I'm hoping its not quite as good as that - I can eat a whole one! :-))
I've just ordered some malt extract - the supermarket seems unsure whether it is a jam or a vitamin. Its in the jam section but part of the "3 for 2 on selected vitamins" offer :D
Nik xx
-
Nik, hope the kids like it, and you not so much. ;D ;D ;D
I am just trialing a new bread recipe, that also has the liquid malt in it. It is called Value Added Bread.
-
I have been meaning to make this for ages and then realized Chookie posted the recipe three years ago :o
It tuned out lovely and tastes delicious.I had to cook mine for an extra 10 minutes. As you can see someone couldn't wait for me to take a photo and took a bite. :-))

-
CC, glad you liked it. Must make it again.
-
That looks lovely Denise, mmm I wonder who took that bite ;D
-
Thanks girls. :)
A little gremlin snuck into the kitchen Judy LOL He ate two slices ;)
-
Gosh Gremlins at CC's place and rats at Chookie's nibbling delicious food. We have similar problems at home and up here. ;D ;D ;D

Naughty little critters. They only go for the tastiest bits .
-
I made this again at the weekend. I didn't have quite enough malt so topped it up with golden syrup. For the fruit I used sultanas, currants and cranberries with some walnuts. I tastes lovely.
-
It looks good too Margaret.
-
Mab, looks nice. Enjoy!
-
I have just made this into 4 cakes, in the oven now.
I tripled the recipe, and then made them as I had a huge amount of dried fruit given to me, and I bought a can of malt liquid by mistake instead of the powder, so I wanted to use that up.
Looks good. :)
-
Obbie, hope you enjoy them.
-
Just wanted to say, I love them. I took one cake to work, staff loved them. :)
