Mini Panettone with photo

Mini Panettone
Makes 10-12 depending on size
Ingredients
2 eggs plus one yolk
1 teaspoon vanilla paste or extract
500g plain flour
2 x 7g sachets yeast
100g castor sugar
200ml milk
200g soft butter
140g mixed dried fruits
100g mixed peel
milk for brushing
flaked almonds for top

Method
Turn oven to 1900
Warm the milk to 370. Mine took 2½ minutes at speed 1.
Add eggs and vanilla. 370 speed 3 for 30 seconds.
Add flour, yeast, sugar and salt.  :: for 2 minutes.
Leave to rise in the bowl for about 45 minutes until doubled.
Add soft butter, fruit to bowl. The bowl will be very high so you may need to push the dough down.  Knead for 3 minutes. :: During this time you made need to use the spatula to keep it moving along.
Put large muffin wraps into muffins tins and put the dough in. Cover and leave to rise for about 45 minutes.
Gently brush with milk and sprinkle flaked almonds over.
Bake for 25-30 minutes. (mine only took 20)

These need to be eaten within 3 days or can be placed in the freezer for 6 weeks.

These look fantastic, can't wait to try them later today. Do you think you could make them as a freeform bun instead of in muffin tins?

I don't think you could free form them cottchick as the mixture is very runny. You could just do more in normal muffin tins without the large papers. I bought the large muffin papers in Woolies.

These look great. Am definitely going to try these. DH's mum is Italian, so we always get one for Xmas. DH loves them!!! When we go to Bali he always buys the lttle ones from the bakery at Centro  :) Off to Woolies tonight (without the kids yay!) so will make sure the muffin cases are on my list.

Wow Cookie they are spectacular. :o I adore Panettone, it reminds me, taste wise, of Saffron Cake that's made in Cornwall.

I am not a huge fan of peel do you think you could just put 240 of sultanas in place of the fruit mix and peel?
Also what about choc chips  ;) choc panettone is yummo  :P

Cookie,  these look yummy.  I will be making these,  thanks very much.    Megan ,Peel can be replaced with small pieces of apricot.   The TMX chops Apricots very well.

Just bought a packet CC, mine are 14cm square but don't know if this is the only size they come in.  Cookie, how much salt did you add please?
