Mini Chocolate Christmas Puddings

Mini Chocolate Christmas puddings

Recipe originally from the internet www.cheffy.com.
I have altered the recipe slightly to suit what I had in the cupboard.

Ingredients

100 g butter diced

6 teaspoons golden syrup

3 teaspoons milk

150 g plain chocolate melted - I did this in the microwave

225 g digestive biscuits - I used chocolate ripple biscuits

50 g raisins

50 g glace cherries

40 g chopped hazelnuts - I used slivered almonds

50g white chocolate, melted

Extra glace cherries cut into small pieces for decoration

Method

Crush the biscuits in the tmx until you have fine crumbs and set aside

Turbo the fruit and nuts for a few seconds but don't overdo them. Add to the biscuit crumbs -  no need to wash the bowl

Place the butter, syrup and milk in the tmx bowl to melt  1 min  80deg. speed 2

Add the melted chocolate to the melted butter etc and mix for a few seconds until combined.

Add the biscuits and fruit and mix on interval for 20 secs  or until combined.

Cover and leave in the fridge to chill for approx 1 hour or until firm and easy to handle.

Using a teaspoon, shape the mixture into rounds, repeating until you have used up all of the mixture.

Top the rounds with a little of the melted white chocolate. Decorate each with red and green  cherry pieces.

Chill for 30 min until the chocolate has set. Serve in petit four cases.

They look delicious. The recipe is quite different to the one I make so I will definitely try yours.
May all dairy items in your fridge be of questionable vintage.
