Boy, you did have a time and a half with cooking dinner, Cookie.

Chicken schnitzel tonight with mashed potato, broccoli, carrots and onion rings. The onion rings were accidently put in my Aunties WW online order so she gave them to me. Will do them in the airfryer.

Cookie, what a nuisance.  However you coped. Well done.
I’m looking for inspiration.

Not sure at the moment.   I took 2 meals out of the freezer last night, Thai chicken curry and Chow Mein but I think I might want to taste the lamb shank stew I made today instead.

This is what often happens here.
Last night we had Salmon Wellingtons from Aldi.  Neighbour said they liked them.  Not bad.  The Salmon wasn’t the best quality.  Tasted more like tinned salmon.  I would like to make them using fresh Salmon.
Also made Apple and Blueberry small pies.

I made chimichurri pork tenderloin with warm rice salad yesterday after marinating the pork overnight first.  Everything made in the TM but the pork was cooked on the grill.  DH loved it, so another keeper.  :D

I’ve had those Salmon Wellingtons Chookie, OK but I thought the salmon portion could have been a bigger piece.

We managed to have RTE baked beans last night. DD went out in the Mustang so I asked her to pick me up some Cannelini beans.

Tonight we are having a crustless quiche.

Left overs today but I did make a brioche bread & butter pudding off cookidoo.  Was quite delicious really for something so simple.  So nice served with a scoop of vanilla ice cream.  It baked in the time given and was set just right. I think I must have used the perfect sized dish, not too deep or shallow.
They tell you to cut off the crusts, but I think that's the best part, love the crunch.  ;D

The brioche (store bought) was a loaf that I had in the freezer for ages which I kept moving around when looking for something, so I took it out yesterday to defrost and looked for a recipe to use it in  :D

Julie, I agree, the crust is the best part of Bread and Butter Pud.
