Chit Chat / Re: Organising recipes
« on: December 19, 2011, 01:53:25 am »
I print the recipes I want and put them in a display folder in plastic pockets.
I can add notes and tweaks easily and the recipes are protected in the plastic sleeves.
This works well for me.

CHRISTMAS / Re: Cooking Christmas Pudding?
« on: December 14, 2011, 01:36:32 am »
Thanks.
The steamer is a large Chinese steamer and has several layers with holes in them so there is really good steam circulation.
It is just that I have not cooked a pud in a Chinese steamer before and pud is too big for Varoma!

CHRISTMAS / Cooking Christmas Pudding?
« on: December 13, 2011, 09:14:31 pm »
I have been making our family Christmas Pudding for years.
I now make it in TMX !Yum.
I usually cook it in a large pot with water 1/2 way up the side of the pudding bowl and steam it.
My question is can I cook the pudding (in stainless steel pudding bowl with lid) in a large metal steamer Chinese steamer?
The only difference is that the pudding is above the water not sitting in it.
Thanks for your collective wisdom and experience.

Special Diets / Help making UMAMI PASTE dairy Free
« on: December 11, 2011, 01:18:41 am »
This may be a silly question as some recipes just cannot be made dairy free and Umami Paste may just be one of those recipes!

Does any body have any ideas for making Umami Paste dairy free?
Parmasan cheese is obviously integral to the complexity of this amazing paste.
But it would be great to be able to make it and use it to add depth and complexity to our food.

We avoid dairy as we have a son who is allergic to milk proteins so it is not the lactose that is the problems so all dairy is out.
Help with this would be appreciated. (If possible!)

Welcome Songria.
The enjoyment of food and friendship is very important.
I don't think it matters how we cook or what machines or gadgets we use, we can all learn from each other and share our experiences and many traditions  from around the world.
I look forward to sharing the food and friendship with you Songria.

Cakes / FRUIT CAKE with 3 ingredients
« on: December 09, 2011, 08:27:17 pm »
This is a very South Australian Recipe as Iced Coffee is consumed in great quantities here.
This is a fun recipe that works every time and has THREE ingredients!
It is affectionately called" FU fruit cake". This stands for Farmer's Union Fruit Cake.
Farmer's union is our famous brand of South Australian iced coffee.

Ingredients

500 mls Farmer's Union Iced Coffee
1 Kg Packet mixed fruit
2 cups SR flour

Method

Soak fruit in iced coffee over night in the 'fridge
Place into TMX
Add flour
Mix  Reverse speed 1 for30 seconds until well mixed

Place in a greased and paper bottomed cake tin and bake at 180 degrees for 45 minutes. Then reduce to 160 degrees until skewer tests clean.

Tweaks
I am sure you could make your own iced coffee (sweetened however you like) and made with soy or rice milk for dairy free

This cake is so easy and good for this time of year!
This is my first recipe post but a very old recipe.
Hope you all enjoy it!

cookie - I've made this one using cold tea instead of the choc milk too. An easy, quick recipe.

I use a microplane to make the lime zest really fine. Then proceed with the recipe.
This is beautiful with seafood.

The Beetroot Salad in the EDC is good, quick and easy.
Colslaw from EDC is also good
2 second salad from this forum is great after making mayo and you can't have a BBQ without TMX mayo!
Enjoy

Chit Chat / Re: cooking classes

I attended the Andrew Fielke class last week.  It was great!
It was really good to see a trained chef with a very interesting and inspiring food philosophy cook with the TMX.
Andrew presented the class very well with really good recipes and tips.
It was fantastic to see how he used our indigenous spices and products in tasty achievable dishes.
I am looking forward to using his products in my cooking in the future.
I think we should be proud of and USE our indigenous products.
It has certainly inspired me to think of Aussie food differently!
Thank you Andrew and the TMX organizers! :)

Introduce Yourself / Re: Greetings from Adelaide

If you put the internal basket on top of the lid without the MC while cooking things like jam and sauces that spit it stops the mess and still allows the steam to escape.
It also allows the beautiful smells to fill the kitchen!
Jam is great to make in the Thermomix.
ENJOY!
Ps. I am also from Adelaide!

I had a varoma Demo a few weeks ago.  I supplied most of the items and they were things I had in my pantry. I was asked for balsamic, vinegar, sugar, lemons, capsicum, 100g cashews, flour etc etc ( I am going from memory here).  They are standard thermomixy items that I use often and had on hand. My consultant bought along several items also. The most expensive items were chicken breasts and sundried tomatoes.
We all found the demo inspiring and renewed our use of the machine including the Varoma which I now use much more.
As a host I bought the Full Steam ahead Cook Book for half price as no-one purchased a machine.
I was given the set of recipe cards of the demo dishes cooked which I use quite a bit.
It was good fun and motivating. I would recommend having one.
