Tenina, I just made the Vietnamese chicken salad today. Absolutely divine! The dressing is delicious and this is a fantastic way to make a small amount of chicken go a long way!  Definitely will keep this one on my regular repertoire.

I just made the Vietnamese Chicken salad too.  YUM!!!

Though......I did have 3 chicken breasts in the fridge, and knew I wouldn't be using 1 if i left it, so I cooked the 3....for 2 adults!   Well....lets just say we have a lot of shredded chicken for lunch tomorrow!!!

Tenina, this recipe is just lovely.  It will become a fav with us as well.  Perfect for a warm day like today in Perth, and also, all the ingredients are things I would have in my cupboard/fridge/garden ready at hand. 10 out of 10

I made this again tonight but instead of using shredded chicken I steamed a couple of salmon fillets.  I felt this worked well and I would do it again.  I really like the dressing.

Did you serve it whole on top of the salad or did you cut it into pieces Dashingden?  I can see that it would work either way.

JD I served it whole on top of the salad for dinner last night and then had it broken up cold with the salad for lunch today.  It worked well both ways.

Made this a few weeks ago as the first of my dinner spinner recipes and like everyone else we all enjoyed it. Such a quick easy salad I'm sure it will become a much used recipe. Thanks Tenina.

This is a superb recipe. I love the dressing.
I added vermicelli noodles and julienned snow peas and cucumber. It was delicious the next day too.

I make it in one big dish and layer everything. then everyone just helps themselves using salad servers.

I'd like to try it with both prawns and salmon as I think it would be excellent.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Yum to all of those suggestions…someone told me at the class last week she seared some scallops and put them on top of the salad…awesome…

OH, and BTW, keep meaning to mention that we gave away gorgeous little chocolate lip balms in our goodie bag from http://skinflint.com.au and they went down a treat….thanks MeganJane!

Glad you liked them!

I've made this yummy salad again. This time tweaking the dressing for a Thai Beef Salad. I didn't have the Savoy cabbage, so used regular.

Vermicilli on the base, then cabbage, carrots, cucumber, snow peas, peanuts (cashews would have been better with beef). Then BBQ'd Scotch fillet, sliced on top with dressing drizzled over.

Dressing was essentially the same with the addition of Lemongrass and Kaffir lime leaves. Scrumptious!! Ate the rest the next day and the next day after that!

Ok I'm just mildly obsessed with this salad...I've lost count how many times I've made it....but I keep making it again and again as a side for when we have visitiors. I've made it the night before and kept it undressed and taken it on picnics, dressing just before eating. And it's my new favourite "getting home late" dinner...what's so great about it is that you can substitute whatever you have in the fridge (within reason) I had some fresh bamboo shoot and some carb-free noodles from a recent trip to my fav asian supermarket...thanks Tenina just awesome  :-*

Hot day in London today and this was perfect way to use up left over roast chicken. Also added some sliced nectarines and this was a delicious addition.
