Title: Apricot Nectar

This recipe is best used with soft, bruised and/or mushy apricots, which you really wouldn't want to eat fresh.

APRICOT NECTAR

Ingredients
800g apricots (stones removed)
900g water
400g sugar

Method
Place apricots and water into TM bowl and cook for 25 minutes at 100c on speed 3.
Add sugar and cook for 10 minutes on 100c on speed 3.

Pour into sterilized jars and seal.

General Tips
You can thin this puree with water and serve with ice as a drink.  Has a shelf life of over 6 months.

Oooh, nice for my apricot chicken recipe.  Could be frozen too couldn't it?

I'm sure it would be fine frozen.  I opened one jar and used half.  The rest of the jar lasted for over 4 months in the fridge and was still fine!  This realy surprised me, I guess it is a little like a jam.

Should fit in - but will go above the 2 litre waterline.  Should be OK with a basket over the opening - but maybe best to go for

720 g apricots
810 g water
360 g sugar

Unless that 800 g appricots includes the stones?  so under 800g once stoned.  If you get my drift

Now you have me thinking Nay Nay:)  I haven't made this since last summer...just waiting for apricots to come back in season.  I know I tend to fill things up a bit and clean up the mess later:)

I wrote the recipe down as I made it, but Thermomixers adjustments sound good.  I will note any changes I make when apricots come back in season.

Instead of apricot, I try peach.  Only have 450gr, so have to do some math.  I reduce cooking time a bit.  Will update with the result.
