Hi everyone
Today I've added English versions of the recipes also in my blog. I am hoping to translate all the recipes with time. When I do, I will post them here as well.
This one is a very tasty sauce. When I first made it I didn't imagine that it would turn out so nice considering that there are only zucchini and it is also quite light!
I hope you like it as much as we do
Zucchini Cream Sauce:
Ingredients:
350g zucchini (chopped into chunks)
120g milk
30g EVO
40g grated parmesan
1 clove of garlic
Salt
Preparation:
Put EVO and garlic in the TM bowl and warm for 2 minutes at 100°C on Speed 5
Add zucchini. Cook for 10 minutes at 100°C on Reverse/Soft Speed
Add milk. Cook for 10 minutes at 100°C on Soft Speed
Add some salt and grated parmesan. Blend it for 20 seconds on Speed 8
Mix it with pasta and serve into the plates
Sprinkle with some parmesan if you like
Buon Appetito

It was my husband's idea in fact. And now my brother in law is asking me to make also Italian versions of the recipes! :)

This sounds like a great way of getting zucchini into the kids. Might have to try instead of normal cheese sauce over the vegies.

Thanks for converting this recipe. I was looking for something easy and had a few zucchini left in my fridge and this was just the thing. The family loved it. Very creamy indeed. We needed to sprinkle parmesan on top as the zucchini was a little bitter. Everyone still ate it. I might use this next time as the sauce for a pasta bake.

I really recommend it with pasta
It is very nice and also budget-friendly ;)
As a person who is in love with cheese, i always sprinkle with some grated parmesan

I made this a few weeks ago (DS gave me a box of zucchini)
My zia (aunty) gave me this recipe minus the milk about 20 years ago. I add blue cheese and cook it for about 40 mins with the MC on, I leave mine chucky
If the zucchini are big I add onions, onions gives the sauce a nice sweetness which the kids love
I agree with farfallina best to use with any type of pasta
Can be frozen .Any type of cheese that melts will do or leave it out
I also made zucchini schnitzel, dip in flour,egg,bread crumbs and fry
Did not think to post, thinking it was to simple and plain

Nothing is too simple for this forum fundj - sometimes people are looking for an ultra-quick meal and one which doesn't have many ingredients.
Farfallina, I will most certainly post a review when I do your recipe.

I like simple recipes. We don't always have enough time or will to cook gourmet recipes :)
I like cooking different things every time. They don't have to be fancy or complicated. Even if they are slightly different i enjoy to try new recipes
I will surely try your version
As blue cheese do you use gorgonzola?
And as onions, you use red onions?
One last question :) Could you give us also the amounts of the ingredients?

This was delish! I added a tablespoon of my vege stock and I had a cob of corn to use up so bunged that in as well. Thanks! ;)

EVO = Extra Virgin Olive Oil... Easy to be confused by it until you know the secret code :D

OMG this sauce is delicious! I agree it is a total surprise with so few, simple ingredients. Both vegos and meateaters in my family happily ate it . . . yahh! Another meal that every one likes, another night of no double cooking!

Do you think it would be doable with pasta being cooked at the same time? How much milk/liquid would we add do you think?

well zebraa, I know that for many recipes you can but I prefer to cook sauce and pasta separately and not together in TM Bowl at the same time because I tried a few times and the result wasn't quite satisfactory for me so I won't be able to help about this. :-\

I made it as in the recipe and......................................fabulous!
Such a pretty, pale green sauce. Iused 5 cloves of garlic :o and the flavour carried really well.
This would also make a great potato salad dressing - with a tangy lemon gremolata or lemon fetta to add some zing. Beautiful flavours - will add it to my list of easy, healthy, quick, delish meals!

I love seeing a recipe get rave reviews. This one sounds great for whipping up if you have unexpected visitors and not a lot to offer them in the way of a meal.

I was busy doing lots of other things in the kitchen today so I quickly whipped this up for lunch and it was lovely thank you farfallina. DH enjoyed it even though I was expecting complaints about 'another pasta' dish served up to him. Had quite a few over the past fortnight and I am surprised he has eaten them all without commenting on their frequency - he is not a lover of pasta. My 2 zucchinis didn't come up to the weight required so I just made it up with some carrot

Made this one last night for the kids and poured it over pasta shells. Added some peas & corn kernels and served to miss 15 months, also added tuna to mr 2.5 - Yums all round. Also - ran out of milk (dud) so used homemade yoghurt. Also couldn't be bothered grating noisy parmesan so just used tasty cheese.

Would this freeze well? I always try to keep some pasta sauces frozen so can just cook pasta to go with them on busy weeknights.

I freeze all sorts of leftover sauces for pasta Coops so I don't see why not. It may need something like a bit of cream or more milk to give it a bit of a lift when reheating as it does thicken on sitting. I made mine one day and served it over pasta the next day and it was thicker the second day.

I agree with judy, when i reheat sauces such as this one I add a bit of milk to make them thinner cos they tend to thicken

I did make this at last and we loved it. Who could believe something so easy could taste so nice. I served it with a roasted beetroot and feta salad I had been wanting to make.

Such a quick and simple sauce, which had a lovely flavour.
I added it to cooked penne, mushroom, bacon and toasted pinenuts.

I was planning on having this last night too. Unfortunately I had started making the sauce and went to put the pasta on, convinced I had a packet in the pantry - but no - so I made it into risotto - it worked well in rice too farfallina. :-* :-*

I had the sauce over pasta with an extra sprinkle of parmesan cheese....mmmmmm
I am going to try using pumpkin instead of zucchini next week.

yum....I tried this tonite - I only had 250g of zucci, so I added some leek with the zucci and then a large handful of spinach at the end and also added some chopped walnuts ! It was a gorgeous green colour and we all enjoyed it - a great low fat dish ! Thanks for the recipe ;)

This is such a great recipe! I cant believe that something so simple is so tasty. I also love the idea about trying it with pumpkin - please let us know how it goes if anyone tries it

On Wednesday night I made this delicious sauce again but I used pumpkin instead.
Weighed and cooked exactly the same way as zucchini and I have to say that I love it better with pumpkin. I poured a lot of it over my pasta....yum!
OH came home and tasted the sauce and he said it was a really nice pumpkin soup :-))
Must admit I could eat it like soup too.

We had this for dinner tonight and it was delicious!
I had some home-grown zucchini's given to me by my FIL in the fridge and I remembered seeing this recipe but never getting around to trying it.
My OH quickly stashed the left-overs in a container for his lunch tomorrow so it was definitely a hit!! :)

My son sends his regards Farfallina! He was very happy to have this dish again. Uni, I use the recipe in the vegetarian book and find the gnocchi works really well. I have not had much success with potato gnocchi but want to give it another go now I'm on holidays, using your tips about the old potatoes etc.

lelly this is what i use
1/2 kg of dry ricotta
1 cup of flour'
1 egg
1/2 cup of parmesan cheese
nutmeg

I made the Zucchini Cream Sauce tonight. Served over pasta, with smoked trout (caught and smoked by hubby!) and asparagus. YUMMO!

This was yummy but I have to admit to a couple of tweaks :) I added half an onion with the garlic as I read someone else had done and 1 tsp of TM stock paste.
I served with some steamed carrot ribbons and beans along with some beef strips that I pan fried with mushrooms and thyme leaves and stirred through the sauce. OMG this was a great after work meal. Thanks :)

I made this last night, so easy and super quick (saved me from getting takeaway). It was quite nice, next time I might add some bacon and maybe a squeeze of lemon or something to give it a bit more flavour.

I was looking for a super easy dinner tonight and I found this one. It was so easy and very yummy. I threw in a handful of sundried tomatoes for a but of a different flavour. Next time I will add some onion and spinach as well.

Added Half an onion at the start and 2 big handfuls of spinach before blending. Turned out great and a beautiful shade of green too :)

I made it tonight. I substituted 10g regular EVO for lemon infused EVO and it was delicious!
Great and yummy way too use up all the zucchinis we have at the moment :)

Just bumping this again as it's a lovely summer recipe. We had it tonight with the last of our Christmas ham.

After being out in the sun all day I wanted something quick, healthy and easy. This was it. I had forgotten how nice it was. With the help of the pasta machine and thermomix we had dinner in no time.
