GF Banana Bread

Makes 1 loaf or 12 small muffins. Can double this  recipie if you want.

60g butter
70g dates
1 egg
2 banana's
140g GF flour (I ground a mix of tapioca seeds, soya beans and polenta - other good options would be rice/millet/buckwheat/quinoa. I ground on Speed 9 for about 1.5 mins)
1 tsp guar gum or as packet directs
pich salt
1 tsp baking GF baking powder
30g hazlenuts. Could use other nuts or chocolate. Ground - so S7-9 for 5-10secs


Pre heat oven to 180 deg. Oil tin/tray.

Grind grains to make flour - set aside
process dates - S7 -S9 for 10-15 secs till desired texture. Set aside
Beat butter 15 sec S4
add egg and banana and dates. Beat 15 secs S5
Add all dry ingrediants beat S4 10-20secs till combined
pour into pans or muffin tins

A loaf takes 40-45 mins, small muffins 15-20

Great little recipe  :-* :-* :-* :-* Never used hazelnuts with my banana bread - thanks for that idea too.
