Moist and Dark Chocolate Cake

Ingredients

•   2 cups plain flour
•   2 cups sugar
•   3/4 cup unsweetened cocoa
•   2 teaspoons baking soda
•   1 teaspoon baking powder
•   1/2 teaspoon salt
•   2 eggs
•   1 cup cold brewed coffee
•   1 cup milk
•   1/2 cup vegetable oil
•   2 teaspoons vinegar

Cooking Instructions

1.   Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 round 20cm cake pans.

2.   In Thermomix combine the flour, sugar, cocoa, baking soda, baking powder and salt and mix speed 3 for 3 seconds. Pour in the eggs, coffee, milk, oil and vinegar. Mix until smooth speed 4 for 2 seconds.  Batter will be thin. Pour into prepared pan.
3.   Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the centre of the cake comes out clean. Allow to cool.

or as cupcakes  I cooked for 15 minutes.

I really like these as they are very light and yet still moist.  I fill the double round cake by spreading raspberry jam on the tops and then adding whipped cream before sandwiching them together.  The capcakes are great plain or topped with dark chocolate ganache.

Cakes / Mini Carrot and Almond Cakes with photo
« on: July 04, 2011, 03:03:02 am »
I've just made these delightful little cakes and thought I'd share them with you.

Carrot and Almond Cakes

Ingredients

200g raw sugar
zest of 1 orange
5 eggs, separated
300g  carrots, peeled - approx 3 medium
200g almond meal
75g self-raising flour

Frosting
170g raw sugar
20g softened butter
80g cream cheese

Method
1.  Blitz raw sugar and zest of orange on speed 9 for 20 seconds.
2.  Insert butterfly and add egg yolks.  Mix on speed 4 for 1 minute.
3.  Remove butterfly and add chopped carrots.  Blitz on speed 9 for 1 minute.
4.  Add almond meal and flour speed 4 for 10 seconds.
5.  In another bowl whisk the egg whites to form soft peaks.  I did this in my kitchenaid.  If you don't have another appliance to do this pour carrot mixture into a large bowl and clean and dry Thermomix bowl thoroughly. If using the Thermomix insert butterfly and beat speed 4 for 3 -5 minutes.
6. Gently fold in half the egg whites into carrot mixture follow with the remained of the egg whites until jut combined.
7. Spoon mixture into cupcake moulds.  I lined mine with silicone cupcake cases so they didn't stick to the tray.
8. Bake at 170 c for 25 minutes.  allow to cool and ice with cream cheese frosting.

Frosting

I a clean bowl measure raw sugar and blitz speed 9 for 20 seconds.
Insert butterfly and add butter and cream cheese.  Whip on speed 4 for 1 minute.  Place in a small bowl and refrigerate so it chills and firms slightly.

Would be good with toasted almond flakes on top.  :D

It seems like there are quite a few steps in this recipe but it was really quick from the time I started until they were in the oven.

It was adapted from here http://www.taste.com.au/recipes/19463/carrot+almond+muffins

If you leave off the icing they are a nice dairy free option and in my opinion guilt free as they don't have any butter in them.

Desserts / Frozen Yoghurt Flavours
« on: April 10, 2011, 06:42:58 am »
Oh Dear this is the very first thread I have started here.  :-\

I work in a primary school tuckshop and we seem to be tossing Greek Yoghurt as it reaches its best before date, so I suggested that we freeze it and use it for NATURAL frozen Yoghurt instead of the BULLA one that takes like a concoction of chemicals.

Now my delemma is to be able to make it with tasty but affordable fruit.  Berries are too expensive at the moment.

To start it off I have:
passionfruit pulp that I have strained
Mango pieces in the freezer
Apricot puree

Can you think of any other flavours that would work and yet be affordable?

« on: February 07, 2010, 05:16:13 am »
Does anybody have the recipe book by Chef Laurent? Chef Laurent Caters for Cooking for Kids and Chef Laurent Caters for Familes?

Do these books have a lot of Thermomix recipes in them?  If you have these books would you recommend them?
