Caramel Butter Cake
« on: May 13, 2012, 01:28:21 am »
I have run out of white sugar and was looking for a cake recipe using brown sugar. I remembered I had this recipe from a Woman's Weekly Cookbook. So I converted it.

Ingredients
125 gram butter
1 tsp vanilla essence
200 gram brown sugar
2 eggs
1 tbsp golden syrup
1 cup plain flour
1/2 cup SR flour
1 tsp ground cinnamon
1/2 cup milk

Preparation

Grease and line a round cake tin.
Preheat oven 180 degrees.
Cream butter, vanilla and sugar on Speed 4 for 1 minute.
Add eggs and beat again for another minute Speed 4.
Beat in golden syrup 30 seconds Speed 4.
Add sifted dry ingredients and milk and beat reverse speed 4 for 1 minute.
Pour into prepared cake tin.
Bake 50 minutes.
Allow to cool and ice with caramel icing.

Caramel Icing

60g butter
110g soft brown sugar
2tbs milk
120g icing sugar

Place butter, sugar and milk in TMX bowl
Cook at 100C, 8min, Speed 1
Add icing sugar
Mix 10 sec, Speed 4
Pour over cake, using a spatula to gently spread as necessary.

Sounds nice DG,
But with the brown sugar should that be 200g or 300g
299 sounds a bit odd and wondering if it's a typo?
