Recipe Review - Potato Cakes with Apple Sauce - MWOC
« on: December 29, 2011, 10:00:48 pm »
I have been making these for years the old fashioned way, using a special grater attachment on my mandolin which always resulted in a lot of hard work and the smell of the starchy water, yuk!  So I was hoping that this version would work so I could say goodbye to the old method, and it did  ;D

I didn't add the lemon juice as my original recipe didn't use it and it was quite ok without, the oats actually made the mixture white and I think they are there to eliminate the starchy watery problem that grating causes.  I only grated for 10 seconds and that was enough, any longer and they wouldn't have been the texture of my originals, I also added season-all salt to jazz up the flavour a bit as 1 tsp of salt for that amount of potatoes wouldn't have been enough.

They fried up beautifully and kept their shape much better than the grated version, probably due to the flour and oats and they tasted delicious, served with marinated (made in the TMX of course) steak and salad, the perfect summer meal.

Thanks for the review Knittercook, we love 'mock fish' as we call them here but the EDC version is dreadful. DH still prefers them done with a grater but I will give this one a go and see if I can get it past him.  For the starch component, did you just use plain flour or cornflour - I have some potato flour which doesn't get used very often so perhaps I'd use that.  Don't know about serving them with apple sauce, it would have to be tomato sauce in this house.

Oh yes JD the EDC version was terrible which is why it took me a while to give this version a try.

JD, Thanks for sending this. One question though, what would the "20g starch" be?

I wasn't sure myself Kerryn so I googled it - going by this answer it is a thickener so cornflour or plain flour will do the job.

I just used plain flour.

I will be giving this one a go, DH loves the grated version but the grating is tedious.
Judy Kiwi DH also calls them mock fish. It was Sunday night tea when he was growing up.

I was spoilt, Mum often used to make them for us for breakfast - is it any wonder I never liked cereal as an adult with cooked breakfasts as a child.

So glad to hear this recipe is better than the EDC one - I made that for the children and was embarrassed at how they didn't work out. But then again, my potato gnocchi in TMX didn't work either so I thought it was me...
Am waiting for my MWOC to arrive at the end of this week - can't wait! What should I try first?

It's not just you.  The potato gnocchi and potato cakes from the EDC are both failures for many of us. :)

I found the EDC ones pretty bland and prefer to use Judydawns recipe http://www.forumthermomix.com/index.php?topic=7833.0

Would someone please be able to pm this recipe to me. I grew up on German "kartoffelpuffer" and find the ones out of the EDC are nothing like the ''real' thing. I normally don't bother with the TM for making these and hand grate the potatoes to make my own German recipe so I would love if there is an easier way to do the in the  Much appreciated!
