Courton, just pop a Wilton 2D tip into a piping bag, position your knuckles to  face 90 degrees, and turn and squeeze piping bag to 12 o'clock position.....instant cream flower  ;)

maddy, are you able to take a pic please of what the Wilton 2D tip looks like from the bottom? Might have something similar in my little bag of goodies that will do something similar

CP, any tip resembling a star shape should work....or experiment with the tips you have, you might come up with a really cool design  ;)
Practice on grease proof paper, and scoop it back into your piping bag when your happy with the design.

This is a fantastic recipe. Very easy and tastes great. I had some leftover Coconut Cream in the fridge so whipped up  Ayla's Banana & Coconut Icecream and had that with the cake for dessert. Yum

All I can say is ABSOLUTE YUM. Made this last night and it was so delicious. The phone rang whilst I was pouring the milk in and accidentally added 150g and it didn't affect the cake at all. So light and moist. Definately will make again.

Maddie, are there any tricks to getting your cupcakes so even on the top. I always have trouble and have given up with cupcakes in my oven the heat is so uneven even with a thermometer is hard to get the positioning correct.

Are they uneven without using the fan wonder?....maybe you may need to try lowering temp. Or lessen cooking  time if using the fan.  Generally I won't use the fan for baking ( cupcakes in particular).....but maybe you may need to, to regulate the heat and keep heat flow even  ???
It can be tricky finding the right rack height, temp. Setting etc.....sometimes I think some ovens are just rubbish for baking! (like my old one :-)))
I do use a smaller ice cream scoop, so the amount of batter is exact in every case, and often I will smooth the tops of batter with a spoon if it's a thicker batter.
.......if all else fails, maybe it might be an option for you to purchase an electric cupcake maker.
