New York Baked Cheesecake

Made this today and was really yummy and easy to make. Hope you enjoy.

New York Baked Cheese Cake:
Number of People:10
Ingredients:

1 x 250g pkt plain sweet biscuits (such as Arnotts Nice)
125 g unsalted Butter
750g Cream Cheese at room temperature
215g sugar
1/2 tsp vanilla extract
2 tsp lemon rind
2 tbs plain flour
4 eggs
1 x 300ml ctn sour cream



Preparation:
Preheat oven to 160, Line the base of a 23cm springform pan with baking paper.
Place biscuits in TM and mix 10 seconds speed 5 or until finely crushed.
Add butter and mix further 10 sec speed 5. Tip biscuit mix into prepared tin, use a straight edged glass to press mixture firmly to base and sides of tin leaving 1cm at the top of the tin. Place tin in fridge for 30 minutes to chill.
Meanwhile clean and dry the TM bowl, add sugar and lemon rind and mix 10 seconds speed 8.
Add cream cheese and vanilla and mix 1 min speed 4.
Scrape down edges add flour and mix further 10 seconds speed 4.
now set TM to 1 minute speed 4, while mixing add eggs 1 at a time and mix until well combined.
Add sour cream and fold in with spatula until just combined.
Pour mixture over biscuit base and bake 1 1/4 to 1 1/2 hours or until set in the middle.
Turn oven off and Leave cheesecake in oven with door slightly ajar for 2 hours. Then Place cheesecake into fridge for 4 hours to chill.

This sounds divine, we love any type of baked cheesecake.

Will do this in a few weeks when dh has settled down about cutting back etc ;D

Hers's a photo, Not a great one but gives you an idea what it looks like. Had another piece today and was even better than last night.

dede do you think a smaller cake tin/pan would be better

The recommended size was a 23cm tin which would of been better, I only had a larger tin so mine was a flatter cheese cake, The 23cm tin would be ideal I think.
