Salsa Verde Potatoes
« on: August 18, 2011, 06:11:07 am »
Name of Recipe: Salsa Verde Potatoes -  from Miele Steam Oven cookbook.
Number of People: adjust to suit.  This quantity served 3 people
Ingredients:
500g potatoes - you can use New Potatoes unpeeled or as I did, 2 very large potatoes, peeled and each cut into 6 pieces
10g Italian parsley, leaves only
10g basil leaves
1/2 tblspn lemon juice
1/4 tsp dijon mustard
1/2 tblspn baby capers, drained and rinsed
30g gherkin, cut into 3 pieces
1 small clove of garlic

35g extra virgin olive oil
S & P to taste

Preparation:
Steam the potatoes until cooked but not overcooked. Set aside in the thermosaver to keep warm whilst you make the dressing.
Place rest of ingredients except for the EVOO & S & P, into the TM bowl.
Chop for 2 sec/speed 6.  Wipe down sides and repeat this step.
Add the oil and cook for 2.5 mins/100o/reverse/speed 1.
Add S & P to the potatoes then pour the hot dressing over them.
Stir gently to coat and serve immediately.

Judy that sounds very nice and I've got a big bag of local, chemical-free spuds that will do it justice!

I'm sure this one would be right up your alley Amanda.  Peeled potatoes really absorb the flavour, don't know so much about small potatoes with their skins left on which is what the original recipe stated.
