White Chocolate Chip Cookies

Converted from “Dinner with The Baker” cookbook.
Recipe says it makes 15 biscuits, so these are for bigger biscuits. I made about 30 using a tablespoon measurement. I like the slight caramel flavour the brown sugar gives.

Ingredients:
100g raw sugar
100g brown sugar
140g butter, room temperature
2 eggs, room temperature
300g Plain flour
1 teaspoon bi-carb
Pinch salt
250g white choc bits
100g macadamia nuts, hand chopped

Method:
Preheat oven to 200o C, and line, and line 2 x baking trays with baking paper.
Put raw sugar in TM 3 secs, Speed 9. Add brown sugar and butter, 3 mins, Speed 2 scraping down sides occasionally.
Put on Speed 3, and on rotating blades add one egg at a time and mix for approx 20 secs before adding the next egg and mix for approx 20 secs.
Add flour, bicarb, salt and 30 secs,  :: Knead speed.
Add choc and nuts, Reverse until combined (may need to use the spatula or fold the last bit in by hand if too stiff).
Using an ice-cream scoop or large tablespoon, spoon cookies onto baking trays.
Bake for approx 15-20 mins or until golden brown. Allow to cool prior to storing them in an airtight container.


Tip: if making the smaller biscuits perhaps adjust the oven temp down to about 175

dede - Made these a few days ago as it's school holidays and no problems here with nut allergies here. They are really nice and crunchy with a lovely taste. Great recipe and I will be making them again.

Tasty - Simple and delicious. Very moorish - it's hard to stop eating them. Thanks for converting CP. I also used the TMX to soften the butter and next time might use it to chop the nuts.

Chookie - These are very nice,  I used dark chocolate bits and chopped the Macas by hand. Thanks CP.

Yum these sound nice. No good for school with the nuts but great for home (or I could leave the nuts out) will give these a go when Im feeling better.

I've been meaning to make these for ages and finally got around to it today. I have been disappointed with the tasteless biscuits of the same kind in Woollies and thought I would make my own.

Simple and delicious. Very moorish - it's hard to stop eating them.

Glad you found them tasty Tasty. Love to hear that you find them moreish! I can never get the nuts chopped how I like them and there's always varying degrees of sizes of the nuts and "dust", so that's why I prefer to hand chop them.

excellent chookie, nothing beats a nice biccie with a cup of tea (or coffee if thats what you drink)

I guess consistency wouldn't be as good with the TMX and chopping nuts and doing them by hand wasn't too bad.

Thanks CP - will be giving these a go.  When I go to the movies, I usually get one of those White Chocolate and Macadamia biscuits from Dome to go with my cuppa.  These sound great.
