fruit loaf easy with photo

4 weet bix crushed
1 cup sugar will only add ½ cup next time  
1 cup dried fruit  
3 tablespoons of butter (45 g)

1 cup boiling water

1 cup Self Raising Flour
1 beaten egg
1 teaspoon bicarbonate of soda

1st 4 ingredients in TM bowl add 1 cup boiling water mix for 20sec on speed 2
Rest for 5 mins
(I added walnuts, cinnamon and dates)

Then add egg, sifted SRF and soda, knead 30 sec.

Bake at 180oC for 45-50 min  
Loaf tin that I used 22 x 11

I double  the recipe, and freeze one of the loaves
Nice with walnuts too.

JD - I've eaten this  2 different ways.  A slice with butter and as a dessert for lunch with custard.  Thanks Uni, nice one.

Denzelmum - Super easy and super moist.  I put dried apricot and dates.  Two people asked for recipe.  Thanks Fundj!

I wish it was easy to find Weetabix here. 
It's possible to order it online but I have gotten some that was rather stale so I gave up on it.

We have shredded wheat but it is not the same.

Mmmm. I may have to buy a small packet of weetbix when we go into Shark Bay next week. Morning tea and dessert all in one.

Thanks for the offer Judy.  However, I don't think I will need it as after I posted that yesterday, I got an email from a visitor,( probably someone I recommended to the forum because they have my email address) with a source for an almost identical cereal product made by Quaker.
I haven't seen it in my local supermarkets but my informant says the local health food store carries it.

Need help - how many grams is 3 tbsp of butter?

Just weighed some Denzelmum - bit difficult with hard butter but it's around about 45g.

kerryn you can use 1 small banana mashed or 1/4 cup apple or prune puree and will have to add an extra 1/2 tsp baking powder per egg replaced. Some of the stranger things as a replacement are 3 tblspns mayonnaise or a 1/4 cup silken tofu.
