ILB's eggless custard (or Brandy Cream Sauce for Christmas)

Name of Recipe: ILB's Eggless Custard
Number of People: 4 good servings
Ingredients:
250g milk
250g cream
30g butter
20-30g cornflour
80-100g sugar
20-40g brandy or rum (optional but nice at Christmas time) or 2 tsp vanilla extract


Preparation:
Place all ingredients in the bowl and cook for 7 mins/90oC/speed 4.

If doubling recipe cook for 8.5mins./90/speed 4.

This recipe has been modified to include tips from our members who tried it.  Less cornflour and sugar.

Tips/Hints:

I used skim milk and thickened cream.  This recipe makes the most perfect custard, hot or cold.  To me it is the equivalent of Pauls Premium Custard and there is no better custard in my eyes that that.

ILB - Made this one last night to serve with some home made apple & raspberry danishes. Though I think I would next time reduce the corn flour to 20-30g as this was really thick and set very quickly. Using a reduced amount of cornflour would give a better consistency to the "Pauls' custard.  I also omitted the brandy and used a little vanilla paste instead. Was very yummy though.

Denzelmum - Turned out really nice, made double quantity & cooked it for 8.5 minutes. Still a nice pouring consistency after 10 hours.  Next time I will cut down the sugarilla - Yum. I cannot emphasise enough how good this is. Perfect with Christmas pudding.

JD - I made this the other day too Kim and this time it set a bit too firm for me too so I'll use less flour next time.  I was rather heavy handed with the Cognac too.

Frozzie - I made this recently to go with pudding and found it set like custard and didn't remain in pouring consistency.. Easily fixed though by whizzing it up fora few seconds in thermie.. Pourable once more but didn't say that way for me.. Don't know why??? Nice though.. I have a preference for traditional style custard but is great to have an option for those who cant have eggs.

Deniser - Made half quantity for two of us. Had carnation milk opened so used that in place of cream with vanilla essence. Very nice and easy.

Thanks for posting this one JD. I'd actaully forgotten all about it...  :o

I can't calim it as my recipe but happy that it's been shared  ;D

I used the pure cream and I think full cream milk when making it. It is a great one!

I'm reading this with very dark glasses on so that I won't want to make it and add more kilos after a sumptuous few days. Christmas, wedding anniversary and it is DD's birthday on Friday. Looks like the morning walks will have to be longer for a while. I love nice food. :'( :'( :'( :'( :'(
May all dairy items in your fridge be of questionable vintage.

I'm making double to go with Bron's apple crumble (without brandy), cook for 8.5 minutes and using soy milk and 50gr corn flour.  Will report the result.

I think the difference consistencies may be because of the cornflour, I use wheaten cornflour and maybe ILB uses real corn flour which apparently you need less of.

With the double recipe - I have lots of left over.  Enough for apple crumble and coconut cake from JD (Nico Moretti one) and still have some left over, about 400ml.  DS will enjoy this for his treat.

Me too with the brandy.. Maybe a bit too much but it was an accident and not i tentional 😄😄😁😁
