Sweet Potato Frittata

Name of Recipe: Sweet Potato Frittata (I converted this from Nico Moretti's Cooking Passions cookbook)

Number of People: 6 - 8 as a side dish or many more if served cut into 3cm square pieces as finger food.

Ingredients:
50g mozzarella cheese, cut into chunks
50g parmesan cheese, cut into chunks
85g onion, halved
1 clove garlic
2 tsp olive oil
2 eggs
60g arborio rice
1 litre boiling water
75g milk
1 large sweet potato, peeled, squared up the sides and cut into 6 mm slices
1/2 tspn grated lemon rind
2 tblspns chopped parsley
S & P to taste

Preparation:

Line a fluted, loose-bottomed tart tray 33cm x 11cm with baking paper.
Grate the cheeses for 6 sec/speed 8. Set aside.
Beat the eggs 7 sec/speed 5. Set aside.
Pour the boiling water into the TM bowl, place the steaming basket in place, add the rice and cook 10 mins/varoma temp/speed 3. Refresh under cold water and add to the cheeses.
Rinse and wipe the bowl dry, add the onion and garlic.  Chop 2 sec/speed 5.  Add the oil and saute 4 mins/100o/speed 1.  Add to the rice and cheese.
Line the prepared tray with the sweet potato slices, cutting pieces to fit as best you can.  Sprinkle with S & P.
Finally, mix all the remaining ingredients together and spread evenly over the sweet potato.
Bake 180o/30 mins.
Filling should be firm and the top golden brown.  Let cool slightly before cutting into squares.

Tips/Hints:
This is half the recipe in the above book and can easily be doubled.  We had it hot as a side dish but it is delicious cut into tiny squares and eaten cold and would be lovely finger food for a party.

DM: Yum made this for dinner.  Next time I might steam the sweet potato  while making rice.

Lellyj: I really liked the hint of lemon and the rice.  I made double quantity in a lasagne dish lined with baking paper.  It was great that you didn't have to roast the sweet potato first

annied:I tried this tonight, it was quick, easy and tasty, thinking chopped up shallots and celery would be nice as well.


Farfallina: As you recommended I bought the largest ones I found. I used around 400g potato each time.
Second time I made it I used a small shallot instead of onion. It was like 15g. I liked that too
This gets 5 stars from me! It has already become one of my regulars!

Nicky74: This recipe sounds lovely, do you think you could cook it in the varoma, I have made omelets before, but was wondering if the sweet potato would be cooked enough, I suppose I could steam that first while the rice is cooking! Think I may have answered my own question! Has anyone tried it in the varoma.

I ended up doing it in the oven, and was so delicious that I just made it again this arvo, love the lemon zest in it.

NF: Do you think you could use a mandolin and slice the sweet potatoes that way?

JD: I don't know how thick a mandolin slices things Nighteyes_fitz, if it's close to 6mm I would say yes.

JulieO: We really enjoyed this.  I used up some caramelised onion in place of the normal onion which gave it a lovely flavour.

Judy how much does it weigh 1 large sweet potato?
If I can find one which is not very common around here I would like to try this recipe

Sorry farfallina, I didn't weigh it but I know I bought a fairly large one (they are all pretty big, some are fatter than others - get a fat one as it makes the job of covering the bottom of the tin much easier & neater) - you won't use it all therefore the size isn't that important and Nico himself doesn't state the weight of the sweet potato.

oooh lovely, think the kids would love this, make a great lunch box addition. They don't do much potato but do like sweet potato.

This looks absolutely delicious, JD, thanks for posting it.  I have a sneaking suspicion this will be featuring at a few of my up-coming Xmas parties over the next couple of weeks, as well as get-togethers during the holidays, as well as lunchtime snacks, as well as ..... well, as well as any excuse I can think of to make it without driving all my friends and family nuts!

Judy I am spending lots of time indoors so it is TMX time. After spending time helping as a result of the floods in Rocky, I am suffering with midges bites, I look like I have chicken pox, a little price compared to the losses of some Rockhampton families.  :)
