Review - EDC Rock Cakes

Made the EDC Rock Cakes today (well assisted dd2 it was her choice of recipe to make).
These were really yummy. Light and fluffy inside, great texture, great taste, though I wouldn't dust with icing sugar in future.

Thanks Zan, haven't had rock cakes for years, used to be one of my favourites to make when my girls were young, I will give this recipe a go.  :)

Did you keep them at all? I haven't had rock cakes for years either. Thanks for the review.
May all dairy items in your fridge be of questionable vintage.

They were much nicer than how I remembered them.
They were meant to be for lunch boxes this week but only 3 remain (well guess they will do one days lunch boxes, lol).

These are my husband's favourite and he even makes them himself ! Even better !

(It is his one and only recipe that he makes full stop lol !).

My memories of rock cakes are from high school home economics in 1962 and they were really ROCK cakes. :)
May all dairy items in your fridge be of questionable vintage.

cookie that's what I thought. I was very sceptical when dd2 chose them as her recipe she wanted to make. I did have a look and couldn't find a review on here, and 2 weeks later when she was still asking for her turn I thought does it matter if they don't work out so went for it. And they really are lovely, soft and fluffy.

We read a story tonight where the pirate princess saved the day by firing rockcakes out of cannons! So we will be making these this weekend ;D

Made these as DH loves rockcakes and hasn't had them for years. Great fluffy texture and simple recipe. I tried half currant, half dark choc chips to tempt DD, but alas she still didn't like the 'sultanas' that she picked out and left on the plate  :-))

DH enjoyed them.

Just made these again for lunchboxes. Quick and easy and they freeze very well. Did I mention yummy?
These are the best rock cakes, very light and fluffy inside with a gentle crunch outside.

I reduce the sugar to 70g and don't bother with the sugar on top. Also substitute a mix of dried cranberries and sultanas for the currants.

Still 5/5 after a year and a half :) :).
