Pide (with photo)

Pide

Ingredients for 2 Pides
250g water
60g milk
5g sugar
25g fresh yeast
550g flour
45g extra virgin olive oil
10g salt
Yogurt

Preparation
    * Warm water, milk and sugar for 1 minute at 37°C on Speed 1
    * Add yeast and mix for 4 seconds on Speed 4
    * Sift in flour. Add oil and salt. Knead for 4 minutes (You will have a little sticky dough)
    * Put it in a deep bowl, cover with plastic film and let it rise for 1 hour
    * Divide the dough in two pieces. Cut some baking paper for 2 tart pans about 30cm diameters
    * Sprinkle with a little flour over the baking paper. Put half dough and sprinkle with a little flour and roll out with a rolling pin. Pass it to tart pan (with baking paper)
    * Do the same for the other half. If you like, you can make some diagonal cuts as in photo using a sharp knife.
    * Let them rise for another 30-45 minutes
    * Preheat oven at 250°C. Place a heat-resistent bowl or pan with water at the back corner of the oven
    * Before you put them in the oven brush with some yogurt on the top
    * Bake your pide for 15-20 minutes until browned

I had forgotten about this recipe farfallina until DD mentioned I hadn't made any Turkish bread for a while. Must get onto it.
May all dairy items in your fridge be of questionable vintage.

Good one farfallina - Aussies love pide.  They even sell them part cooked so that they can be heated and finished to serve with dips. Yum
