Roasted Vegetable Calzone with Pesto Dressing

Roasted Vegetable Calzone with Pesto Dressing:

***Make up 1 x Pizza dough from "Everyday Cooking" cookbook***

Filling Ingredients:
200g pumpkin, peeled and sliced
2 zucchini, sliced
1 onion, sliced
1 small eggplant, sliced
1 whole red capsicum
olive oil
sea salt
100g sliced pepperoni or salami of choice (optional)
200g ricotta cheese
200g mozzarella cheese (grated in TM)
2 large field mushrooms, sliced
bunch fresh baby spinach
additional olive oil for brushing


Filling Methods:
Place all vegetables except spinach and mushrooms on oven tray, drizzle with olive oil and salt to taste. Place in hot oven for up to 30 minutes. Wrap roasted whole capsicum into paper bag and leave to cool. When cold enough to handle, de-seed and peel, then tear into strips. Cool other vegetables. Set aside.

To assemble Calzone:
Cut dough into 4 balls. Roll dough out into 4 large circles. Spread Garlic Pesto (recipe below) on each base and then layer vegetables, meat, and cheeses ending with spinach, topping off with additional mozzarella if desired on one half of each base. Fold the dough over on top of filling, sealing with small pinches to securely close. Brush with olive oil and cook in hot oven (200o or higher) preferably on heated Pizza stone for approx 10 mins or until golden. Drizzle with additional thinned down Garlic Pesto dressing (use olive oil or lemon juice to thin) on serving.

GARLIC PESTO:

Ingredients:
100g pine nuts
4 garlic cloves
handful fresh basil
50g Parmesan cheese
100g olive oil

Method:
Dry roast pine nuts in TM bowl for 6 minutes at 100 degrees pm Speed Soft.
Add garlic, basil and Parmesan and mill for 15-20 seconds on Speed 8. Through lid and with blades rotating on Speed 3, add a thin stream of olive oil, until you have a nice pesto consistency. Add sea salt to taste.

JulieO - First time I've had a calzone and it won't be the last!  Loved these flavours and thought the pesto went so well with it.  I forgot to get ricotta but added a little shredded tasty cheese and parmesan to make up for it. 5/5

marns - OMG!! How nice are they?? I didn't have any pine nuts so I used pizza sauce as a base but they were so yummy! I have 6 little kids 9 and under and they all seemed to love them too, which surprised me considering the type of vegies in there! They were certainly a winner and I will be making them again for sure!

Wally - t was super tasty and super easy! This will become a regular on our meal plans. I didn't have any fresh basil so I just used baby spinach in the pesto with a tbsp of tube pesto and it was divine. Thanks so much!

cookie - We really enjoyed this. I had made some ricotta earlier in the day and used some of that.
I made 2 larger ones we ate for dinner last night and then 2 smaller ones for lunches.

A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Another thanks for posting this recipe CP!  I love the look of this recipe, and I only have the 2010 calendar.  Is there anything else in the 2009 calendar thank people recommend?

I finally got around to making these today.  First time I've had a calzone and it won't be the last!  Loved these flavours and thought the pesto went so well with it.  I forgot to get ricotta but added a little shredded tasty cheese and parmesan to make up for it. 5/5  ;D

I know this is an older recipe but I made them today and I just have to say.. OMG!! How nice are they??

I didn't have any pine nuts so I used pizza sauce as a base but they were so yummy! I have 6 little kids 9 and under and they all seemed to love them too, which surprised me considering the type of vegies in there! They were certainly a winner and I will be making them again for sure! I did take some photos if anyone is interested? I just need to figure out how to upload them :)

Bumping an oldie, but a goodie!

I made this for dinner tonight and it was super tasty and super easy! This will become a regular on our meal plans.

I didn't have any fresh basil so I just used baby spinach in the pesto with a tbsp of tube pesto and it was divine. Thanks so much!
