Dry Roasting ?
« on: December 12, 2008, 03:00:13 pm »
Since I can't play yet, I have to just ask questions.  Is the Thermomix capable of dry roasting some things?  For example, many seeds and nuts are better if they are "toasted" before use.  Sooo, let's say I want to use some pignoli (pine nuts) which should almost always be toasted first, can I just throw them into a TM and let it stir them as they toast?  What about smaller quantities, like whole cumin seeds?

yes defnitely!

you can then chop to make a spice mix or paste :)

only thing i find it not so great for (might be different for others) is frying things like bacon - tends to go soggy rather than crispy.

I'm wanting to start making museli for DH again, but he much prefers it toasted. Can you dry roast oats in a significant volume in the TMX or am I better off figuring it out in the oven? I'm thinking that baking trays with a single layer of oats = not a large volume either. Just trying to find the fastest way to produce real quantity for him so that I don't have to do it every week  :P

Best in the oven.   Much faster - especially if you have used the oven for something else before hand - or while warming to make a dish.

The TMX does a good job of dry roasting small amounts of spices for Indian dishes, which is excellent, because then you can just blitz them after they're roasted!
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

I made the pumpkin soup in the everyday cookbook last night - delicious!

I want to roast the seeds, even though it's not something I have tried before.

To start, I soaked the seeds overnight in salt water, but now I'm not sure what to do with the seeds next. !!!

It's just a small quantity and I'd rather roast them in the TMX than heat the oven.

The seeds are spread out on the counter now, drying out.

Any advice - time, temperature, how to know when they are done - would be greatly appreciated!

Haven't done pumpkin seeds but you will need Varoma temp and best to have it on speed soft or 1 and it is likely to take about 10 mins or so.  May be best to do in the oven?
