French Fries Without Potato! (with photo)

Well this is an interesting recipe. I have got it from Italian “Voi…Noi…Bimby” magazine which is the official magazine of Thermomix in Italy. They really look like french fries! You can fool your family or your friends. At least until they get the first bite :)

Edit: Let's make things clearer  ;) Even if they look like french fries, they won't taste like fried potatoes. They will be slightly cripsy outer sides and soft inside



French Fries Without Potato:
Ingredients:
900g water
10g salt
300g chickpea flour
20g olive oil

Sauce
40g olive oil
2 springs of rosemary (only leaves)
1 clove of garlic
Enough salt and black pepper


Preparation:
Put water and salt in TM bowl. Cook for 10 minutes at 100°C on Speed 1
Add chickpea flour and olive oil. Cook for 5 minutes at 100°C on Speed 3
Wet a deep tray with water. (I used a 21x31cm tray)
As soon as it’s cooked, pour into the tray and let it cool down. (It should be thick around 2cm)

For sauce; Put the olive oil in the TM bowl. Add rosemary and garlic together with salt and black pepper. Warm for 5 minutes at 70°C on Speed 1.

Cut the cooled compound into approx. 2x6cm pieces like French Fries (or any other French Fies size you desire)
Cover oven tray with wax paper. Place your french fries. Brush them over with the sauce you prepared.
Bake them in a 200°C preheated oven for 15-20 minutes. Serve them warm.

Tips/Hints:
I read that some people mill chickpea in TM bowl to make chickpea flour. Some others say that it would damage the TM bowl so they don't recommend to do so. I didn't want to take any risks so I preferred to buy chickpea flour from the supermarket. Also in the original recipe they don't mill.

This recipe appeared just at the right time. I'm on the lookout for low carb recipes, especially things to replace rice, pasta and potatoes. I'm trying these chickpea fries this evening (or I would have if I had had more than 140g chickpeas) :-\ I've never had any problems with chickpeas in the TMX. Saves me travelling into town to buy gram flour.

Thanks very much for posting :) It's the first TMX site I've seen in Turkish. I'll just go and have a look how the google translator handles this language ;D

Well, the translation into English is great, i.e. it is quite easy to decipher the translation. The recipes are brilliant! I'm going to have to try the recipe for ricotta cheese.

@Tebasile: When I cooked them people didn't understand that they weren't real french fries until they took the first bite indeed :)

@Vivacity; I am happy the timing was right for you. I do hope you like them. I beleive I have the very first Turkish TMX blog. It's not very known in Turkey. As a matter of fact I live in Italy  :)
Google translator doesn't work all the time. You can send me email if I can be of any help with the translation.

Grazie - they look great.  Like the use of chickpeas in these types of dish.  You can certainly grind the dried chickpeas without worries in the TMX.  Just remember to put your blades in the freezer or make sorbets every now and then to sharpen them.

@Thermomixer: Thank you for the advises. I've never heard of putting them in the freezer to sharpen them! It's really good to know!

After getting feedback from you and vivacity about chickpeas, i sure will try next time to grind them with no worries

Do you reckon they'd freeze okay at the pre-baking stage? (after cutting to size)

Now that I've made my first attempt I don't know how well freezing would work! 

I'm not sure what I did wrong but mine did not look like yours lol  I couldn't get them to "set" The top layer was hard but underneath was mush.  The taste grew on me (more so when I added the sauce!!) but yes... not sure what I did wrong with the mixture.  I had to put them back in the oven and even then they were still mushy.

Hi Snoozie

When you prepare the mixture it is like a pudding
You pour into a tray and let it cool down. Then it should thicken
It wont be hard but it will have the right texture to cut into pieces
When you taste it has kind of pudding texture

You place them in oven tray and brush with the sauce and then bake. The sauce will make the outer sides slightly crispy. If you like you can bake them longer and you can also turn them upside down to brown all the sides.

They wont taste like potatoes and they wont be 100% crispy. Inside they will remain soft.

I am sorry if that wasn't what you expected :-\
I will make a modification in the re cipe to make it clear

Not your fault!  I didn't mind the taste but wanted them to look pretty like yours lol  I think I messed up though as I thought you had to put the sauce on after they'd cooked not before hehehe  Will give it another go and see how it goes... how nice is that rosemary/garlic ??

ohhh I think I get it now!  hehehe I'm so silly!!!

So:

1) Make mixture, pour into wet dish
2) After mixture has cooled you cut it into chip shapes
3) Put on oven tray then brush with sauce
4) Bake!

Yep, I completely stuffed up mine lol teach me to use my handwritten recipe and not come back here to check I had it right!!! lol
