Time to cull the leftover food floating around in the fridge. Thai-style fried rice, with pad kra pow chicken, pineapple, Thai basil and fish sauce seasoning. Not bad.

Made butter cake using traditional method just now. My butter caused the creaming process to take longer than usual, despite using my KitchenAid. Then eggs didn't combine into a fluffy batter even though they've sat in room temperature for hours. Net result took me 45 mins to get my batter ready.

Next I made Nigella choc chip muffins in the TM. 19 muffins within 25 mins, including time to grind sugar to caster sugar.

That's why we eat less butter cake nowadays 😄
