Sun Bran Loaf no nuts or eggs

Sun Bran Loaf
Ingredients
1 cup bran or all bran - 80g
3/4 cup raw sugar - 150g
1 cup sultanas - 150g
1 1/4 cups milk - 300g
1 1/2 cups SR flour - 270g

Method

Mix the bran flakes, sultanas, sugar and milk together in the bowl.  Let stand for at least 2 hours.  Grease a loaf tin.  Sift the flour onto the bran mixture and mix well.  Bake in the tin at 1800C for about 1 hour.  This can be served sliced and buttered or plain.

If you wanted to use the TMX for this I would let the mixture stand in a bowl and add it to the *: just before you mix it. Then add the flour and mix on  :-: to stop the sultanas being broken up, just long enough to incorporate the flour.

Thanks cookie1 - I remember making these in tin cans !!  so they had a round shape.

It was the only cake my mum used to make!  I've also done it in cans Thermomixer and still have them sitting in the back of the cupboard.  Memories - isn't it nice that us oldies can share these times with each other.  I sometimes substitute the sultanas for chopped apricots or dates Cookie1.  Nice sliced and buttered but I haven't done them for years now.

I used to make this all the time.  Haven't done so since I have had my TM.  I always added some cinnamon into it or mixed spice.

Well I just might have to try these as in DD's kindy class we have a nut, egg and dairy allergy. I will try replacing the milk with stewed apple I think I am forced into being creative. If that doesn't work then I will make some rice milk for my cooking argh!!

My second recipe for the challenge this morning.  I remember this one from when Mum used to steam them in cans so she will be very pleased to receive one of my cakes today.

I didn't have time to let it cook for an hour so I poured the mixture into 2 x 11 x 21 loaf tins and cooked on a low shelf for 30 minutes.  Perfect and delicious to boot. 

I've added the metric conversion to the recipe. I only used 1/2 cup sugar (112g). I let the allbran etc soak in the TMX bowl then added the remaining ingredients and kneaded for 15 seconds. The sultanas didn't seem to mind  ;D

Thanks Cookie, love this recipe and won't feel too guilty having a slice now and then. The reduced amount of sugar had no negative affect on the loaf.

I made this with soy milk, sultanas and chopped dried apricots.
It was nut dairy and egg free! Win win!
I think that means I participated in the latest challenge.

Thanks for the recipe Cookie.  I also used to make this in soup tins.  I made it with coconut sugar and it had a lovely malty taste. Next time I will add some walnuts and a pinch of spice.

Good idea.  I really like this bad kept telling myself that it was healthy.  Especially the butter on top. ;D
