does anyone have a recipe for mint jelly?

Not at the ready - nut may be a good use for the mint that has gone out of control.

Try

500g Granny Smith apples, cored and roughly chopped (it's not really necessary to peel them)
375ml white or cider vinegar
500g sugar
4 tablespoons mint leaves


Place the mint leaves into the TM bowl and chop for 10 seconds on speed 7.

Place the apples into TM bowl.  Chop for 5 seconds on speed 5.

Add vinegar and sugar cook for 20 minutes at 100 deg on speed 1 with MC out and basket over the lid.

Purée the mixture for 10 seconds on speed 8, then add the chopped mint and mix for 5 seconds on speed 4.
