Magic Mayonnaise from Judydawn.
« on: January 12, 2010, 01:49:41 am »
Wow, Judy your mayonnaise is to be the first.
I have simply copied it-hope that's ok.

Magic Mayonnaise from OZtion Forum

1/4 cup lemon juice
1/4 cup grapeseed oil
2/3 cup sweetened condensed milk
1 egg yolk unbeaten
1 tspn dry mustard
1/2 tsn salt
few  grains cayenne - 1 light shake

Place all ingredients into the TM bowl in the order listed. Blend on speed 3 for 1 minute.

There was a comment on the forum that this mayonnaise used on coleslaw tastes like KFC's which is why I made it as I love KFC coleslaw and haven't had it for years. Don't know if it is but it is very nice.  Just use the amount which suits your taste.
May all dairy items in your fridge be of questionable vintage.

Thanks Cookie, a much needed addition.  I will delete the other two floating around. Easier said than done.  I see we can detete our messages but not our recipes.  Perhaps you could do it for me please Cookie - no point having in in 3 places now that we have the correct place for it.  Are you going to transfer everything which now belongs in here as well?  Much appreciated.

Looks a great recipe Judy. Would olive oil be to strong. I don't have any grapeseed oil and in typical fashion I want to try it now.

Yes, all extra virgin olive oil would be a bit strong - just a vegetable or peanut oil would be better.  or even half and half.

Thanks Thermomixer, tied up with the children this afternoon.  I would have said Olive oil would be too strong for this too.

This is the best ever mayo - my grandmother inlaw always made this recipe and used 4oz (125g) of melted butter instead of oil.  I sometime put a clove of garlic in TM first for an aoili style and/or dill to serve with fish.   :D

Yes KJH, it is mustard powder but if you don't have any I don't see why you couldn't substitute it for seeded or dijon mustard.  Add a bit, taste it and see if you need more would be the way I'd go about it.

Thanks so much Judy!  I am trying Chookies KFC for the first time tomorrow, and wanted to make coleslaw to go with it.  I am sure they will both be yummy!

This is superb.

Never quite found a really good coleslaw dressing recipe, but this is it.

Thanks JD :)

What do you do with the rest of the condensed milk, make more?
