Savoury Bread and Butter Pudding

I wasn't sure what to use for soft curd cheese.  After examining my Christmas cheese collection for a good ten minutes I eventually decided some grated tasty cheese would surfice.  I also threw in some fresh basil and cherry tomatoes for extra flavour.  I used a loaf of spelt bread that I had baked this morning.  For a nice presentation I cut my bread into fat fingers and lined them up in rows - each row overlapping and being propped up by the previous row.  I used a large rectangular glass dish and baked it for 45 minutes instead of 50-60.

It is a lovely brunch dish that can be adapted flavourwise depending on the ingredients you have on hand.  It was a little rich for us but that may have been due to the tasty cheese that I used.

Soft curd cheese is dry cottage cheese - sometimes called "hoop" cheese or "farmers" cheese  in various places.

I make my own, it isn't difficult and the results are exceptional - you can produce a richer cheese by using richer milk or a lower-fat cheese by using skim milk - it is under your control. 
It is also the basis for cream cheese - you just need to add heavy cream and mix and press it to make it a more solid mass without the "curds" being separate.

and my explanation on another thread:
After the cheese is drained overnight, transfer it to a bowl and stir in 115 g heavy cream and press the mixture firmly into a shallow bowl or plastic container or a fancy mold, if you want to serve it with crackers, etc.  Chill it for an hour as this will help it hold its shape.
Otherwise use it as you would store-bought cream cheese.
The richer the milk you use, the richer will be your cheese.   

Raw milk will give the very best result but you do have to heat the milk to at least 80° C. and hold it at that temp for 4 minutes (don't let it boil) then let it cool slightly before proceeding with the above process.

Great to see you reviewing the Fast & Easy book - would be great to have photos in the book to see excatly what they mean, but good recipes.

These recipes are very tempting Chelsea. I may have to contact them and buy one. It soundsd worth it.

I want both of them! I will be contacting them in the New Year now things have settled down a little. I did promise VHJan that I would ask about the costs of bulk orders so if anyone is in Perth and is interested let me know so that I have numbers for the UK to work out postage on. With a little luck it will work out cheaper for postage in bulk  ;)

Thanks Andi for the cheese explanation.  It certainly had me wondering.

I love the UK Fast and Easy book Kathryn and Cookie would really recommend it.  I know it is quite expensive with the postage though.  I'm not overly keen on the UK Demonstrator Delights booklet, but I guess it comes down to personal taste.  Of course I can't comment on the Indian cookbook . . . . . . .  :-)) ;) :-))
