Quick Chicken Curry - EDC
« on: October 27, 2009, 12:34:08 pm »
I just made this and would recommend that you use chicken thighs. It's not specified, and I used breasts - they broke up into little pieces!
I found that the TMX struggled with this quantity of ingredients and wouldn't recommend the 500g chicken meat. I would halve this recipe.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

we make this every so often (i'm sure it's the same one) with breasts and haven't had a problem - perhaps cut them bigger? we love this one!

Maybe that was the problem, I cut them into 1 1/12 cm chunks. It was very tasty, just that the chicken went to mush.

I'm only a new TM owner and tried this yesterday - it was very tasty and delicious. We used chicken thighs and Ayam Thai Red Curry Paste - recommended!

This is one of my favourites so far, I've found that I only need to add about 180g of coconut milk as so much liquid comes out of the chicken the end result is that the sauce is too thin, I also add 1 tblsp of cornflour for 5 minutes at the end to thicken it up a little more if needed  :P

I made this yesterday for the first time. I used chicken thighs, they worked out fine. I found the sauce to be too runny so I thickened it by adding lentils. Very quick & easy & would certainly make again. :)
