Chicken Galantine

Name of Recipe: Chicken Galantine

Number of People:  12 slices

Ingredients:

150 grams of peppers, preferably 50 g of each red, green, yellow
2 chicken breasts, cut into pieces (300g)
2 chicken thighs, boneless and skinless, cut into pieces (300g)
100 grams of sweetcorn, fresh or frozen kernels or canned
1 pinch of salt
1 pinch of black pepper
2 teaspoons vegetable salt, recipe HERE
600 g of water

For the sauce
1 bunch of dill, leaves only
1 clove of garlic
300 g of natural yogurt
2 tablespoons mayonnaise, prepared with Bimby

Preparation:

1. Place peppers in pieces in the TM bowl, chop for 3 seconds on Speed  5.  Remove and set aside in a bowl.
2. Place the chicken into the TM bowl (in portions up to 300 g), chop for 10 seconds on Speed 7. Remove and set aside in a bowl.
Repeat this step until all the chicken is chopped.
3. Place the chicken in the TM bowl with the corn, peppers, salt, pepper and vegetable salt, mix for 15 seconds on Reverse and Speed 3 until the mixture is well mixed.
4. Distribute the mixture onto two sheets of transparent film. Roll well and form meatloaves. Close ends of the film and place it in the container of Varoma.
5. Pour the water into the TM bowl, position the Varoma and cook for 30 minutes on Varoma temperature on Speed 1. Set aside the Varoma. Clean and dry the TM bowl. Allow galantines to cool and then put them into the refrigerator for about 3 hours. Unroll the galantine and cut into slices (1 cm.). Arrange on a flat range.

For the sauce:
7. Put into the TM bowl the dill and garlic, chop for 4 seconds on Speed 7.
8. Insert the butterfly.
9. Add to TM bowl the yoghurt and mayonnaise, mix for 10 seconds on Speed 4.
10. Remove the butterfly.
11. Pour the sauce into a a small bowl and serve with slices of galantine.

Tips/Hints:
Cut the slices very thin and enjoy with bread or with sauce.
It is a dish suitable for picnics

Hi Thermomixer,
I've been recently trying some recipes from A Tutto Vapore as well
I saw that you've already posted this one  :-*

I made it yesterday. it was soooo DELICIOUS! My DH and I loved it!  :)

I had to make few necessary changes
First, I didn't have any vegetable salt so I simply excluded it
Secondly, I couldn't find dill so I used parsley
And thirdly I used 4 chicken thighs instead of 2!!! (After you remove the bones, skin and nerves the weigh is reducing significantly. OK! I accept! I overclean!! :) Nevertheless, it depends how big the thighs are and how much you clean. When I bought chicken I asked opinion at butcher's saying I needed 300g flesh out of it. You'd better check out with yours. )

I've had this on my list to do for 2 summers farfallina & Thermomixer but haven't got around to it. It looks lovely and moist farfallina.  Like you, I defat my thighs so well I need almost double the meat.

Yes JD, it is really moist this one
I highly recommend you to do it this summer  ;)
I liked also the sauce. There are many similar (or even the same) yogurt sauces in Turkish kitchen

I'd advise to cut into thin slices. It is nice to have them covered with the sauce

Does the recipe quantity for the sauce give you enough farfallina or would you suggest doubling it?

For me the sauce is quite enough JD
I wouldn't suggest to double it  ;)

Thanks for making it and giving us a photo.   :-* :-* :-* :-* :-* :-*  There are a few Tutto a Vapore recipes here - mainly because we can't buy the book here in Australia without a Varoma demonstration, so I found the Italian recipes and translated them.  Let me know if there are any mistakes in the interpretaions.  Grazie

I haven't checked them all but the translation for this one was just great!! You are better than you give yourself credit for;)
I saw some other recipes that you uploaded. When I try them I let you know about the results ;)
