Walnut and Banana Pancakes

Name of Recipe: WALNUT AND BANANA PANCAKES

Number of People:  4

Ingredients:

1 Tablespoon Raw Sugar
30g Walnuts
40g Rolled Oats
2 Eggs
275g Milk / buttermilk
1 tablespoon Lemon Juice
2 Banana’s roughly chopped
270g Self Rising Flour
½ teaspoon Bi - Carbonate Soda
Extra fruit and ricotta cheese for serving

 Preparation:

Add sugar, walnuts and rolled oats into bowl and , set dial to  *: and turbo for 1 second and set aside.

Add eggs and milk and mix together on speed 4 for 5 seconds.

Add lemon juice and roughly chopped banana’s (I break them into about 4 pieces each) and mix on speed 4 for 3 seconds.

Add flour, carb soda, sugar, walnuts and rolled oats and mix on speed 4 for approximately 10 seconds until combined.

Heat a lightly oiled non-stick fry pan and drop large spoonfuls of the mixture into the pan.  When bubbles form on the surface, turn the pancake and cook for about 1 minute.

Serve pancakes with extra fresh fruit topped with ricotta cheese (mine added maple syrup as well)

Don't say it too loud Thermomixer or you will give up my game to them!  ;) ;) I am toying with making 70g of the flour wholemeal flour. I think that the recipe would support it without noticing it too much by the teens - sometimes they are fussier than the 4 and 2yo  :-)) :-))

Okay,

this will be an afternoon treat tomorrow 8), it just sounds too good to skip it ;D.

The funny thing is: America, Canada, Australia all eat pancakes for breakfast. In Germany and Netherlands they are a main dish. I love pankakes for lunch with a mixed salad an cheese baked in.

Hi!

After a headache glued me to the couch yesterday, I made them today.

I made one half of your recipe and my girls loved them. For me, I prepared them with freshly milled spelt (yeah, I know, Im a spelt lover ;D) and agave and ate them all with maple syrup ;D! Yummyumm. Very good.

Here´s my version with spelt and Agave:


Ingridients:

270 g spelt
30 g walnuts
40 g oats
2 eggs
275 g milk
1 tablespoon agave (or Honey)
1 tablespoon lemonjuice
2 bananas in quatres
3 teaspoons bakingpouder

Preparation:

  • Mill spelt in two portions, each: 2 min./speed 10, set aside.
  • Mix walnuts and oats 1 sec./speed 10, put with the flour.
  • Mix milk, eggs, agave (or honey) 5 sec./speed 4.
  • Add Lemonjuice and bananas, mix 3 sec./speed 4.
  • Add flour, bakingpowder and nuts, mix 10 sec./speed 4.
  • Fry in little oil until browned from both sides.

Well after going to the fridge this morning and finding no milk, I was glad that I thought this recipe contained butter milk and had taken some out of the freezer last night!

We all thought that they were a nicer pancake this morning, lighter and fluffier. Yummier  ;D

Faffa,  love this recipe.   Made it for tea last night. Very versatile,  add a couple of egg yolks left over from cooking and some egg wash left over from bread making. These are substantial perfect to follow a soup dinner.  Thanks faffa ;D,

For the first time you try them Rubyslippers I would try blitzing the walnuts quite small ...that is how I got away with it. Now I can leave them quite chunky and the banana too (you might need to process it a little longer when you add the banana as well) - it's all about deception I can tell you  ;D ;D

Thanks for the recipe idea for breakfast this morning Faffa. I had to compromise and they still turned out great. One wanted banana, another apple and another plain pancakes. With your recipe I made plain apple/banana pancakes and they loved it. Just added 1 apple and 1 banana instead of 2 banana's, no walnuts. I also found I needed a little more buttermilk to make them the right consitency. Could have been my flour or the fruit I'm not sure. They were a hit anyway and we have some left over for afternoon tea. Next time I'm going to try the spelt version with finely grount walnuts and see how that goes.
