Caramel Fingers

Caramel Fingers
Makes 15
Ingredients
150g butter
1/2 cup brown sugar
1 teaspoon vanilla essence
1 egg
3/4 cup dates
1/2 walnuts
1 cup SR flour
Preparation
Put dates and walnuts into bowl, turbo once or twice until chopped but still in good size pieces. Set aside
Preheat oven to 180 C and line a 30cm x 20cm slice tin.
Place butter, sugar and vanilla into bowl. 1 minute, speed 3 until creamed. Scrape down bowl.
Add egg and beat 30 seconds, speed 3.
Add dates and walnuts, reverse, speed 2, 20 seconds.
Add flour and  :: until barely combined. Remove bowl and give a good stir with a spatula to incorporate the rest of the flour.
Bake for 25 minutes. Leave in tin to cool.
The slice may be iced if you wish.
Place 1/4 cup brown sugar, 1/4 cup icing sugar, 30g softened butter and 1 tablespoon boiling water. Speed 3 until well mixed. Drizzle this over the slice. Cut into fingers to serve.

These sound lovely Cookie. Did you use fresh or dried dates?

I used dried dated DD. Fresh dates never live in this house as I eat them on the way home.  :D

This is delicious Cookie! I made it today and will be making often! Thanks for another yummy recipe :)

I subbed nuttelex for the butter so it's dairy free.

I'm glad you like it. It seems to have a caramel flavour from the dates or something.
