Apple and Strawberry Cake

Apple and Strawberry Cake
Ingredients
100g peeled, cored and finely diced apple
zest and juice of a lemon
200g SR flour
25g cornflour
1 teaspoon baking powder
110g cold butter, cubed
110g caster sugar
125g strawberries hulled and halved, plus 200g for decoration
1 large egg
150ml milk
100g strawberry jam
Preparation
Preheat oven to moderate. Grease and line a 20cm round cake tin
Place the apple in a small bowl and stir in the lemon zest and juice. (you can blitz the apples in the thermomix if you wish)
Place the flour, cornflour, and baking powder into the bowl, Add butter. Speed 5 until it resembles breadcrumbs. It won't take long.
Add the sugar, halved strawberries and the apple/lemon mix. Speed 4, 4 seconds.
Add the egg and milk. :-: speed 3/4, 10 seconds. if not combined add a little more time.
Pour into prepared tin and bake for 35-40 minutes.
This doesn't need the topping but if you wish to do it, when cake has cooled place strawberries on the top Glaze with the jam and 1 tablespoon of water that has been heated slightly to mix.

This cake can be made in the TM 5 using the same times etc
May all dairy items in your fridge be of questionable vintage.

Cookie that cake looks delicious, I'm on a diet trying to lose at least 5 kilos, I would love a piece but can't trust myself , so I won't make it YET.
