I made this yesterday as DD needed something special for work. I loved how you beat the eggs and sugar with the butterfly on 60 degrees. The cake only took about 30 minutes to cook then. It is very light and lemony.
The icing uses Berry Lime Coulis from FFS. I froze the coulis I didn't use as it is delicious as well.
The photo doesn't have the raspberries on as DD took them to work to put on when she served it.
